Hi Guyz!
Its been a while I logged on with my username, can't even recollect what it originally was. I guess after the Nairaland freeze or virus attack, I was "reborn".
Well here's kidney sauce & rice for your delight!
Ps. I know it isn't the right forum, but am most comfy here, so anyone who has a job for an accountant or mgt position in PH should please let me know.
Just moved into town & the boredom is killing.
Thanks Guyz!

Lovely! Would you mind sharing the recipe? I so love fried rice with less oil.
Sorry dear. Saw this late

3 cups of rice
Carrot {about 3 big sizes}
Green beans {2 cups}
Sweet Peas {small tin}
Sweet corn{small tin}
Green pepper {1 big size}
Liver {300g}
Meat {2kg}(chicken, beef or goat meat)
I used chicken
Vegetable oil {15cl}
Onions {One bulb}
Curry powder
Turmeric (coloring spice) {2 T/spoons}
Salt and pepper to taste

Parboil the goat meat, chicken or any other with all the necessary ingredient (salt, onions, thyme spice, curry powder, and any other spice of choice) the good thing is that you can chose your spices and flavors. Allow the meat to cook for ten to fifteen minutes, taste for salt, then pick out and grill, deep fry or barbecue.
(I fried mine.)

Chop the cabbage, green beans, carrot, liver and set aside.
Fry the liver if you want. I like to fry mine

Remove the white center seeds from the green and red bell peppers and also slice.

Parboil the rice also and cook with half of the juice obtained from parboiling the meat (water from the meat) and two to three cups of water, cook until it is almost done.
Set aside

Set your cooking pot on fire, allow to dry, then pour in about 10cl of groundnut or vegetable (or margarine) If you want to use cooking margarine a sachet would be enough.

Allow to heat then add the sliced onions stir for 1-2 minutes then add the chopped carrot and green beans, any of this two can actually go first.

Stir for 1-2 minutes then add the curry powder. Add the cabbage, stir, add the meat juice (water from the meat), add ground pepper (optional), add the chopped fried liver, add 1-2 cubes of maggi or knorr then stir and taste.

You would have a yellowish mixture which would often taste overly spiced, don’t worry the rice would balance the taste. (If it doesn’t taste overly spiced it is advisable to add another cube of maggi and salt so it doesn’t become tasteless after you add the white rice.

If you are satisfied with the taste then add the green and red bell pepper, sweet corn and sweet peas, stir, add the almost-done white rice, stir, cover your pot and
cook for 5 to 10 minutes, you are done with fried rice.

Thank you so much dear, I appreciate. I have some questions though.
Won't I cook the liver before frying?
What of the tumeric, you didn't mention it in the cooking procedure.
Lastly, the cabbage, what quantity is needed for 3 cups of rice.

Sorry for too many questions, I just want to get it right when I prepare it next week.

You add turmeric same time you add curry

Of course you should boil the liver before frying I assumed you already knew. My bad.

Just a little cabbage will do.
I didn't even add up to a quarter of a small cabbage in mine because I don't like to see it after it is cooked.
You can decide not to add if you want to. Won't make much of a difference
