Ogiri adds a certain flavor to the soup, while cocoyam is a thickener.
Some people use cornflour as a thickener in place of cocoyam.

once u put the cocoyam into the soup, it dissolves and starts thickening the soup.
If u dnt wanna pound cocoyam after boiling, u can use a blender...but make sure its a strong blender, and then u can blend in batches so u dnt overwork ur blender.

I add potash to my cocoyam while cooking, so it gets cooked and softens quickly.

Are you serious? So all this ede I throw away cos they refuse to get soft could have bn salvaged. In fact the last time I cooked bitterleaf soup I swore not to ever buy cocoyam again. shocked

U just encouraged me. I will rebuild my Francine library. Left most of mine in Nigeria when I relocated....I want my kids to read them.Not all these fairy romance tales of these days. The thing is I can now download soft copies on Kindle from amazon however, they don't have so much options.

My best soup in the whole world! It can go with uziza, uha,ukazi, olugbu or aňara leaves. But I'm not Anambra nor Enugu so I don't cook with ogiri (never eaten it before) or even cocoyam. I thicken with achi or ofor (rarely).
Again, I like my native soup not too watery but definitely not too thick. It should be in between.

But my dear, the face of this soup(so green and fresh) makes me wanna forget that there's ogiri in it & devour it. Well done.
