But the circumstances behind it is a crime (Stalking) and I won't be surprised if he is using those pictures to scam in another avenue

It's shikin

Remove the skin and fat, add any seasoning of choice and pepper, marinate and set aside.
Get flour, small corn flour, baking powder and mix. Add egg white, season as u want and pepper, cold water to make a paste then mix with the chicken and fry in hot oil. U can make it crunchy if u desire.

Get tomatoe sauce, some herbs and whatever u feel like using and fry small. Pour in the chicken and mix.

The original has honey and soy sauce. Just didn't use them. I've used them before and they are good but majority don't like the taste of honey at a point.
