how do you stir fry noodles, I want to learn

All my life, I have been boiling them

Ok.

First of all, prepare all your preferred ingredients (depending on the kind of stir fried noodles you want), then drop your noodles in a pot/pan of already boiling water, allow to boil for some few minutes, stir with a fork to separate the noodles, then drain into a sieve as soon the noodles are separated. (You don't want it too cooked, otherwise it becomes too sticky)

Put the pot/pan back onto the heat (preferably pan), add oil (just about the amount you use to fry eggs), add your chopped onions and hot peppers (important ingredients in my stir fried noodles), fry on a medium to low heat till the onions caramelize and the peppers release the flavour and aroma (you can add any other ingredients you want at this point), add your precooked noodles, sprinkle the seasoning/spice on top and stir. (This is the point I added my ugu)
Keep stirring on a low heat till noodles are well combined with the ingredients.

Never mind if it gets burnt a little and sticks to the pot/pan (that's the best part for me sef)

I hope it's clear enough...

Food for the night. With goat leg.
The soup was too much so the goat leg drowned in it. grin

Best efo riro ever. There is about a multitude of diced pieces of ponmo, shaki, snail, dried fish, panla, goat meat, so every scoop is met with total deliciousness. What with me, the pounded yam, and the efo, it was total foodgasm. Damn......

Let me guess, either you used too much tomato in your pepper mixture or you did not boil the pepper mix. I used to make the same mixture as a young padawan.

LOL. Much wise you are master Obi wan. I think the wahala started from the shrimps. It was frozen and I didn't wait for it to defrost. Then the meat was boiled separately and had liquid in it too.

Please I need this recipe embarassed thank you.

Happy to oblige. What you'll need.

Spinach
Red bell pepper
Shoko
Tomato
Habanero Pepper
Onions
Goat meat
Tripe
Ponmo
Stock fish
Crayfish
Iru
Seasoning cubes
Palm Oil
Salt.

Cut the meat you have into small pieces. The more the variety you have the better. Just do your best to have goat meat. Season and cook the meat making sure you have enough broth left over. Clean and cook your stock fish and ponmo separately then dice into small pieces as well. Blend your pepper mix and boil it with the goat meat broth until all the excess liquid is gone. You are looking for a puree-like paste. Bleach your palm oil and then dice half of your onions. Fry your assorted meat and when it's done scoop 'em out and add your iru. Reduce the heat and fry for about 45 seconds then add the diced onions. Now re introduce the assorted fried meat back into the mix including the ponmo and stock fish. Make sure the heat is at medium to low setting. Add your seasoning cubes, and ground crayfish. Mix thoroughly and let it cook for about a minute or two. Now add your pepper mix and let it cook for about 5 to ten minutes. You'll know it's ready when you see the oil rise to the top which is when you add your spinach. Let it cook for about 5 minutes and at this point you should see little to no liquid in the soup. Now if you really want to achieve Ananda so as to attain the highest levels of earth shattering foodgasm, have cow leg in the mix. Enjoy............
