Dear koolchicco;

I will report to Nigeria with immediate effect; as soon as I complete my malaria shots. (lol).

Never had cooking prowess! While in Nigeria, my mom did not allow the boys to cook. We could make fried plantains and eggs or make coffee or very light things out side meal times, but the boys were never allowed to make meals Don’t get me wrong, we wanted to help but we were not allowed.

In college, it is mandatory that all freshman students stay in the dormitory, so I got use to dormitory life from Jump Street. Sorry, my college does not have one of those two per room dorms; you have your own fully furnished apartment and the money for meals were billed into the dorm rent. The good thing is that the meals are buffet style, all you can eat; so, I never wasted my time trying to cook.

Now that nostalgia has started kicking in; koolchicco, I am in trouble!

Leo Baby,

Please don’t pay them any mind.  They fully understand the disease you are talking about.  English is not your mother’s tongue and I am certain very few English people can speak your dialect.  Many of them are just comedians.

Of greater interest to me is, how can snails cure asthma?  I am very conversant with medical research and I live in the United States.  We are talking about multi-million dollar business here.  To the best of my knowledge, the main stay of asthma treatment is beta-2 stimulants and steroids:  Beta-2 for the constrictive airway and steroids for the inflammation.  Viscid and tenacious mucus is a problem with asthma; but the only treatment for that so far has been to encourage fluid intake (Mucinex, the new drug for mucus is a joke).  There are also some long acting selective beta-2 stimulants, which are used for chronic and recalcitrant cases.  However, none of these is a cure for asthma, just symptomatic treatments.

If you know a cure for asthma, we need to talk!  I promise, it will be your passport to fame and untold wealth.

Gamine - Koolchicco

With Gamine, I can see what I am going to get: As they say, a bird in hand is worth ten in the bush.  Thanks any way, and thank you Gamine.

Once in a while, I fly to parties in London, so I am familiar with the terrain.  With Nigeria, I will need a visa, and some 6 hours just to get out of the concourses (did I mention that I have not been in Nigeria for years?).

How I wish this would lead to someone who would begin to think of how our own moimoi - as you would want it - could be exported/imported - as a paste or the like, with all the instructions on how to prepare it, and even the nutrient composition, expiry date et al.
Tee Zero,

Your suggestion is a wonderful and excellent idea. That is one idea; I do not mind investing in: It is simply marvelous! Done right, it may become an international dish and establish Nigeria on the culinary map of the world. Importantly, it will save guys like me a lot of time and money.

In place of moi moi leaves, I preserve tomato sauce tin/cans or use aluminium foil and make it into a pocket or purse.
Originally, I washed and dried cans to use in cooking the moi moi.  However, when I came to use the cans, I noted that some of them had rusted.  That is why I shelled out ninety dollars plus tax for six Pyrex dishes ($15 each) , at Kitchen Aide.  The moi moi was still a disaster!

Fish in moin moin is nice, if you are a fish person.

Gamine,

Thanks an awful lot.  Please post the pan’s pic.  Next time the nostalgia strikes, I want to be ready.  I did add dried salmon in the last one.  Next time, I will get fresh salmon; microwave it first to make it stiffer, before putting it in the bean paste.  I wish I was in London; I will save me a lot of money by just coming to visit you.  [Don’t mind paying for the moi moi and the visiting-time value.  I am sure it will cost me less than I have already spent.].

In the U.S. you have to be in a city like New York, Washington, D.C., or the likes for such amenities.

Potu this is going to be a bit lengthy but it is helpful. I am not sure I'd recommend "powdered beans". Why not use the real thing?
Trust me, moi moi doesn't need half of the ingredients that people dump inside it.
I am very grateful. Thank you very much

Oh mine,

I have gotten so many wonderful responses and I am so grateful to you all. A picture of what I did wrong is emerging. In fact, I did everything wrong; what is emerging is a picture of what I should have done. No tomatoes, no Pyrex dishes, no steak, a carefully selected bean powder or bean powder made from scratch. You guys are great, please keep it coming!
FoodRe: Just Doesn’t Taste Like Moi Moi! by Potu(op): 8:27pm On Sep 28, 2009
tpia.:
tomatoes and steak dont go in moinmoin btw. Pepper is better. Boiled eggs, diced liver and fresh fish are acceptable though of course nothing wrong with experimenting.

They used to sell that powdered stuff in Nigeria- it was rather nasty when my dad tried it too.

I'd much rather stick to fresh ingredients and grind the beans in the blender.
Wow, I did not know that! Thanks a million

Hi everyone, I am cooking up a concoction once again. I have everything I need for the above soup. Thing is how do I thicken it? and also, can i put one ogiri into it or will that ruin it? doi slice up the snails or leave them whole.

Waiting in anticipation, cheesy
If memory serves me well my mom cook items that require time to be done separately; and then she re-constitutes all items to make the soup.  This gives you control over the quantity of water in the soup and its.  Hope this comes in useful to a late comer.
FoodRe: Edikaikong by Potu(m): 7:32am On Sep 28, 2009
u guys, sorry to bust your bubble, but that picture up there doesnt even come close to what edikang ikong looks like.

whatever u do, after chopping the ugu, spray some salt on it and squeeze very well, removes loads of the water from the leaves. that way the soup will be thick, with the water from the waterleaves and meat stock, and enough palmoil.

trust me, i am from calabar.

You are so right.  I don't know how to cook it, but edikan - ekong (stirr fried leaves) use to be my favorite dish.  I have no clue what that picture is!  Anyway, I have been out of Nigeria for many years, and dishes like that only exist in my dreams.  Yesterday, I tried my hands on moi moi -- Needless to say, I ended up in Four Season's Hotel, to congratulate my failed effort.
FoodJust Doesn’t Taste Like Moi Moi! by Potu(op): 4:59am On Sep 28, 2009
I recently learned black-eyed bean is available in powdered form; so I decided to make some moi moi.  The last time I had some was more than fifteen years ago.  I went to the Italian market for some fresh ingredients (tomatoes, onions, eggs, flank steak, chicken breast, dried salmon, etc).  After that I went to the Spanish store and got my powdered beans.  I know moi moi is cooked; wrapped in some type of leave but for the life of me, I can’t remember what the leave is called.  Anyway, I greased some Pyrex glass dishes with virgin olive oil, loaded the dishes with my moi moi paste, and steamed everything in a large vat for two hours.  I am certain all the ingredients were of the highest quality and the nutrients were balanced.
Somebody help me: It did not even taste like moi moi; it tasted terrible.    Life in the US of A is no longer fun: I think I need my mother.
