You don’t want to get me started on the Tarantinoverse, or who is better, Li or Chan. Those topics are sacred.

So I’m flipping through channels yesterday, and I stumble on an interesting Nollywood movie, in one of the scenes, a waiter was trying to fill a ladies glass. Suddenly the waiter fidgets, the lady immediately jumps up, picks up the glass of wine and splashes it on the waiter’s face.

A bit over dramatic, but some customers can be very temperamental especially when a waiter/waitress appears not to know what s/he is doing.

I have been in a bar on Admiralty, and witnessed a client go ballistic on a waiter. Guess what? It’s always the waiters fault, why? The customer is always right.

How do you avoid or handle the above scenario from playing out in your Bar?

Simplez.

 (1) Use the Right Glass

Serving a client Beer in a cocktail glass is a sin. Always use the right glass, a waiter must know the difference between tumblers, beer glasses, and stemware, and understand their usages.
When you serve a client Cognac in a warm snifter, you’ve directly indicated to your client” I know what I’m doing”. 

(2) Use the Right Ice

Ice cubes are a standard method of keeping drinks chilled but, ice balls are recommended instead of ice cubes. Because, ice balls melt slower, take Scotch Whiskey for example it’s meant to be enjoyed in its original form and not diluted by the water from melting ice, allowing your client’s savour the taste.



(3) Pour Professionally

Have you ever been poured the perfect pint of lager, it’s a work of art my friends. From the angle of the glass set at 45 degrees, to the way the bartender straightens it out to 90 degrees during the pour, to the 1 to 1.5 inch head of froth at the end. That’s the professional way to pour a pint; you can’t get this in any beer parlour. Its art, and you gotta respect the Barman!! . Not too many Bars have beer on tap in Lagos, but a couple of bars do so keep an eye out.

(4) Use the right garnish

Should you think only chefs garnish things up, you’re a learner. Smart Bartenders garnish drinks up with fresh flavors and color. Never joke with the lemons and limes. When I get served my drink with peanuts it tells me you are old school. Exotic nuts is in vogue cashews, walnuts and pistachio’s.

(5) Get expert advice
There are a variety of drinks and each has its serving etiquette. You should add lime to a lime flavored drink and orange to an orange flavored drink. You should add ice before the drink, not vice versa. These are little things you should pay attention to but, you’re not
alone on this.
