Yes you are correct. You can wash, season and marinate fish before adding it straight into the pot. You can as well scald it with boiling water to remove the odour and toughen up the skin.

It is nonsensical to pre-cook fish, prawns and other seafoods before cooking again as they are already very soft to begin with.

You will simply end up with rubbery, overcooked fish that’ will be like chewing stick. Or scattered, over-soft fragments of flesh.

People from south south riverine areas understand this better. Their seafood soups always taste good because they still have some nature flavour and texture without overcooking them to death.
