We have our way preparing plantain, it's called matoli kiss

Ingredients:
5 Plantains, sliced
2 cups, coconut milk
1 onion, sliced
4 cloves of garlic, pounded
Salt
Knorr
1/kg beef or fish, anything!!!

Method
Boil the meat in a pot. When it's well cooked, remove from heat and let it cool
Put the sliced bananas in a pot. Slice the onions and add the garlic on top. Sprinkle some salt and pour the coconut milk. Place on heat and cover. Let it boil for about 15 minutes until tender.
Add the well-cooked meat into the cooking plantain and stir gently.
Pour more coconut milk mixed with knorr and let it simmer under low heat for ten minutes. Remove from heat.
Spare some rice at the side wink
You can serve with some cold mango juice. But I find it best when served with tea, especially in a cold afternoon

Steamed cabbage (Dedicated to Hauwa*)

I steam cabbage in a very simple way. I like it this way wink

Ingredients:
finely chopped cabbage
corriander leaves
1 cucumber, sliced
1 carrot, cubed
1 green pepper/sweet pepper, sliced
a pinch of salt

Method
Add the chopped onions, cucumber, carrot, green pepper and the cabbage in a sauce pan. At the top, add the cabbages(This is so because the cabbages cooks faster). Spray the salt and cover.
Place on heat and steam for five minutes. Mix the contents and remove from heat.
You can enjoy that with pilau, jollof rice or fish and pounded yam

Beans stew recipe?

You need;
1/2 kg beans
1 piece of fresh ginger, pounded
3 cloves of garlic, peeled and grinded
Corriander leaves
aromat/maggi/knorr
1 onion, sliced
3 tomatoes, peeled and chooped (Optional)
1 cup, coconut milk

Method:
Boil the beans for about 2 1/2 hours. Make sure they are well cooked.
Add the onions and ginger in a pan and fry while stirring to avoid sticking on the pan. Add the garlic and fry together for about three minutes. Add the tomatoes and fry for five minutes.
Add the beans, stir and cover. Let it boil for ten minutes.
Mix the coconut milk with the royco/maggi/knorr in a separate container then pour the mixture in the boiling beans stew. Let it simmet on a low heat for thirty minutes.
Best served with chapatis, rice or pounded yam.
It's soooo yummy and softer when cooked with an earthen pot wink wink wink

Fish Peppersoup
Ingredients;
1 Fish, red snapper/tilapia
2 pepper, grinded
3 cloves of garlic
1/2 pice of lime
Spices (Optional)
2 ripe tomatoes, chopped
1 onion, chopped
Cooking fat
1/2 cup, coconut milk

Method
Clean the fish, remove the gills and scales. (You can even remove the head and the tail, but I prefer my fish with the head intact wink
Season the fish with the pepper, garlic, spices and the lime. Place it on a saucer or plate that can allow for draining of the water. (This enhances the taste of the fish)
Chop the onion in a pot, add cooking fat and place on heat. Fry until golden brown then add the tomatoes and cover for three minutes.
Put the coconut milk in a pan, add knorr or royco and heat while stirring until the mixture becomes a thick paste. Remove from heat and mix it in the pot of the frying tomatoes and onions.
Put the fish in the mixture and cover. Let it boil for about ten to fifteen minutes when the fish is ready.

Serve with either rice, pounded yam, chapatis, or anything. . ! But I love it more with rice. Wash it down with pineapple or passion juice and a piece of watermelon for a fruit. Bon appetit!!! grin

I ate beans the four years I spent in high school so the first year I spent at home; I made such a great fuss when my mum prepared beans. But then into the second year; whenever we have to prepare beans, I would prepare spinach, kales, cabbages, e.t.c (It reduces the chances of constipation). Afterall that's the most affordable thing in the market when we are way into the tym of the month when the pockets are running dry. So from 15th to 30th of the month, it's beans and green grams like prisoners. . .
Now this is what makes beans more bearable!!!
