FoodRe: Roasted Corn Or Cooked Corn Which One Do You Prefer? by UKDREAM: 11:26am On Aug 18, 2009
I love both but the corn must be fresh and soft.I've noticed that Lagosians can't roast corn without burning it.Back home you get perfectly roasted golden corn with pear.

FoodRe: Chinese Fried Rice And Sauce by UKDREAM(op): 1:17am On Aug 16, 2009
I prepared my debut chinese fried rice today and the result was amazing.I used carrots, green peas, shrimps and i added scrambled eggs to the rice instead of garnishing the final result with it.I also used Oyster sauce and soy sauce both on the rice and the sauce. My final dish looked a lot like the second picture above. The oyster and soy sauces gives the rice that nice dark color.
I made my sauce with beef and i added carrots, green pepper and cashews just like the chinese restaurants serve and i used lots of fresh pepper.

I'm feeling like one kind of chef now!Lol

@ Toyos,thanks for the pointers.

Please we should learn to tolerate other people's actions even if we do not find them appealing provided they are not breaking any laws.I actually thought this post was a joke until i saw the pictures above.Wonders will indeed never cease.

@Bluespice,you handled that really well. That's maturity for you.

FoodRe: Pls Help With Ukpo-ogede Recipe! by UKDREAM: 10:42pm On Aug 13, 2009
I am from the Ibo speaking part of Delta State and ukpo- ogede or plantain pudding is one of our traditional meals.Adding a lot of pepper with some Red Kidney Beans puts a whole new twist to this meal. It's very delicious.Other tribes add corn to it but this is the delta version.

Ingredients-
1-Very ripe plantain blended to a pulp
2-unripe plantain flour
3-Palm oil
4-Fresh tomatoes,pepper,onions and crayfish
6-Red Kidney Beans(You can get this at the supermarket or grocery store)
Salt to taste
The listed ingredients can be adjusted to one's personal taste but the blended ripe plantain and the plantain flour should be of equal or nearly equal proportions.

Method
Set a pot with a low level of water on heat.Prepare your wrappers. If you can't use the traditional leaves, you can use little plastic containers or little nylon bags to wrap your pudding.
Blend ripe plantain with tomatoes, pepper, crayfish and onions to a soft consistency with water  and set aside
In a deep bowl, mix plantain flour with palm oil thoroughly, add blended mixture and mix together.
Add salt to taste and lastly add the red kidney beans.
Mix very well and scoop into the containers or little nylon bags.
Note that the consistency should be slightly thicker than that of moin-moin.
Cook for 30 to 40 minutes.
You can tell it's cooked when it's colour changes to a dark brown.
Enjoy

EducationWhat Happens If U Don't Pay Ur Tuition Bal In Uk Schools At D Stipulated Time? by UKDREAM(op): 5:06pm On Jul 07, 2009
I got information that if one can succeed in obtaining Visa to study in the UK after paying the tuition deposit to the school, that one can actually complete his/her studies without paying the balance but that the degree certificate will be withheld until the debt is cleared. Please is this information true?
