I speak not as a specialist, nevertheless, let me borrow from some experience I got watching my mum cooked the dish while at home.
Just the way you prepare the beans for akara by soaking, removing the skin and grinding, so also you start its preparation.
The only differrence is that you add nothing to it before grinding/blending. You grind the beans alone, while now leave you with whitish matter.
This matter is now stirred thoroughly in order to allow pulping (this I will tell you later)
After the matter is light enough (the volume increases with stiring) after stiring, it is now wrapped in leaves and steamed just the way you do to moinmoin. (please enough no salt is added at any of this stage). The steaming does'nt last as long as moinmoin, only ensure that water is added at intervals to avoid burnt sacrifice! smiley Steaming time is between 30 to 40 minutes. This is Ekuru!

What gives taste to Ekuru is the stew that is served along with it. After unwapping it, the stew is normally poured on it head.
The fried stew is done with pepper, crayfish, seasoning, flavours and lots of sliced onions. Very important! Please use palm oil and not vegetable oil.

You don't eat Ekuru the way you eat moinmoin. After pouring the stew on the prepared Ekuru, you them mash it into pulp using your hand. The pulp will easily mash if you really stired it well in the beginning during preparation. While you mash on ground, you now add salt to taste. Salt is also avoided in the beginning to help aid mashing.

Companions:
Ekuru (a local dish among Yourbas) is locally taken with solid pap (eko). So also when little bolied okro is added (on ground) to it, some part of Yorubas also take it with eba "garri".

This is the little I know about Ekuru. I hope I make a little sense to someone out there. smiley

Omo, you're missing a LOT!!!!!!!!!! I tried it with pepersoup fried with palm oil AND okro soup. OMG!!!!!!! My belly is wiggling from thinking about it.

the best to eat it with is the fried peppery sauce with diced fried onions, not had it in ages though cause we normally get to when we visit d h/town,

You may add all sorts of things to the pepper sauce,including seafood, if you prefer. Some like it with okro,others without. It's very nutritious food.

I thought it was corn moinmoin but after going through this thread, I seem to recollect faintly that there's a bean dish called ekuru. But i dont understand how its different from moinmoin. Maybe its made without oil or something like that.

ekuru is white and almost tasteless, that's why it's eaten with fried pepper soup or okro soup or palm oil.

And it's texture is wayyyyyyyyyyyy diff from moin moin.

yes very easy to make but i like the native way my mom does it. real fresh corn blend/beaten in mortar (not engine lipsrsealed) then add the orishirishi cheesy cheesy cheesy wrap in native leaf grin

i don't have mortar here and i can't find a good corn (the corn here are for 3months old baby tooth) so you can as well beat/grind the cob.
