Calling on all Nigerian cooking experts and non-
experts!
What would you do if you found out that the
Jollof Rice you are cooking is already soft, yet
contains lots of water?
How would you finish cooking the Jollof Rice
without the rice getting any softer?

u got no other choice than to sieve it or let it dry.. but if u let it dry, na agidi u go eat o cheesy

to prevent it, start with putting small quantity of water, then little by little add more. but u av to be careful and always be watching the food so that it won't burn.

the rice will suck in the water of course making it too soft a.k.a agidi.

Find paper ,preferably newspaper and spread it over the pot and cover it making it air tight on low heat,it will absorb the excess water

Hey darling; all you can do is drain the water away by seiving it and then put it back on fire covering it with foil on the lowest heat possible; so basically drain off all the water and put back on fire to dry up... Just drain the water and add little more ingredients and you are good to go as it will be almost as if nothing happened.

i'd increase the fire used in cooking to the highest possible and leave the pot open. Also i wont stir the rice much to avoid turnin it to mash. Has worked for me
