Whether you tell or not,its not hard for your spouse to know your income if you are a salary earner, if you lie about it he or she would find out sooner or later which will cause problem.
Except you are self employed or have multiple income then it will be difficult for your spouse to track how much you really make per month so its easy to lie but not advisable, you guys are one not two again for Christ sake,you should be open to each other regarding finances, also it makes your wife not to make outrageous demands since she knows how much you earn
