This is served as a snack rather than an appetizer.

Ripe plantains are dipped in a slightly sweet batter made of rice flour and all purpose flour and then deep fried in coconut oil. Deep frying in coconut oil gives a distinctive flavour to this snack.

My mom used to prepare this by adding egg along with other ingredients mentioned below and since I'm not very fond of the smell of eggs I prefer making without it.

This can be easily prepared in a very short time and if you are expecting guests at a very short notice then this is definitely a life saver smiley

Ingredients:
1 cup rice flour
3 tbsp all purpose flour
2 Ripe plantains
1/4 tsp turmeric powder
Sugar-2 tbsp
Salt to taste
Few cardamom seeds crushed
Baking powder-1/4 tsp
Water- for making a thick batter
Coconut Oil for frying

Method:
Peel bananas and cut them into thin slices. Mix all the ingredients except water. Add water slowly and make a thick batter. In a frying pan heat oil at medium heat. When the oil is hot enough dip each banana slice in the batter and deep fry. Remove it from pan and drain off excess oil in paper towels.

Why all the added fat to good old plain fried plantain,like oyinbos do?Battered fries soak in unnecessary oil.

Its called "Mosa" and its nice to eat. I ate a variant of it at Iroko restaurant on Brixton High road. They call it Kelewele

~Back home we have fritters w/ the same/similar recipe made with either unriped Banana or over-riped Plantain. . .they're Yum!

~Yeah the Ghanaians have a Plantain recipe called Kele-wele. . a lil bit spicy tho. . .i think they put Ginger & pepper on it. .  undecided

~Kele Wele Recipe~

•6 just-ripe plantains, peeled and cubed into bite-sized pieces
•1/2 tsp Cayenne Pepper
•1/2 tsp Chilli Flakes
•1/2 tsp Freshly-grated Ginger/1 Garlic clove chopped
•1/4 tsp Ground black pepper
•1 tsp Salt
•2 tbsp Water
•Palm oil (or vegetable oil) for frying


Method:

•Peel Plantains,Cut into cube-sized pieces

•Grind/Blend or pound the cayenne pepper, chilli flakes, ginger, salt and black pepper to a powder then add to the water. Pour the mixture into a large bowl and toss the plantain cubes in this mixture to coat them evenly.

•Add some 2cm depth of oil in a wok and heat until almost smoking then add the plantains in batches and fry, turning once, until they are golden brown on all sides. Drain on kitchen towels and keep warm whilst the next batch is frying.
