Hello all,

I'm looking to create a Wikipedia entry on kunu, as I find that information on this drink is missing. I'm thinking of putting something like this:

"Kunu (also known as kununzaki) is a popular drink consumed throughout Nigeria, mostly in the north. It is usually made from millet or sorghum, although it can be made from maize as well.

The variety of the drink made from sorghum is a milky light-brown colour, and it is usually sweetened and flavoured with ginger before being consumed."

So my questions to fill in the gaps are:

Does anyone know if it is consumed in other parts of Africa?

Can anyone PLEASE fill me in on the exact procedure on how to make kunu? I know it involves using ground grains that have been soaked in water, but my knowledge beyond this is scanty.

Am I right that is it flavoured with ginger?

Are there any other variants of grains used to make it?

What is the colour of kunu made from millet? I think kunu made from maize is the colour of ogi.


If there's any other thing you can add, please feel free to do so. Let's put our culture on the map of knowledge!

Kunu is not brown, its whitish white   grin

I think they consum it in Niger,chad and northern region of ghana

Fura de nunu that's what they use to make it right, been a long time

the fact that is look disguisting or the fact that dirty people make it in a dirty bottle and started shouting around town ewa ra kunu

Kunu can be brown especially that which is made out of Sorghum or Millet. Forgotten though the process. Yeah ginger is put occasionally to give it some flavor.

walahi, i love kunu zaki.

i love the other type made from millet with big millet balls inside (drink and chew) from Kaduna

i have tasted freshly made burukutu (soooooo sweet). I have a classmate whose mama sells burukutu

I love a good meal of Pete and kunu zaki  grin

Kunu made from corn alone, whitish
kunu made from sorghum, brownish
kunu made from millet, somehow whitish
mixtures of the grains, color lil brownish
all yummy, don't forget instead of sugar we add sweet potatoes before blending so no need to add sugar.

*corn sprout, corn soaked for few days, dried sweet potatoes, ginger little pepper and blend all together to a very smooth paste
*in a seperate pot, bring large amount of water to a boil
*pour the boil water inside the paste and stir. it will look thick like Akamu (pap).
*cover and leave till next day.
*the next day, it will look watery (i think the corn sprout made the thickness to change to watery some hours after making it
*filter with thin clean filter cloth
*pour in plastic bottle and put in fridge

@omoge i you missed a step in the kunu process.
-divide the paste in to two equal parts.
-puor the hot water in one part,stir and cover.
-mix the two and then sieve.
-sweeten to taste

kunu isnt the same as fura de nunu. they are quite different. and yes ginger is used to flavor it

Yeah not the same thing. Fura is from millet mostly farmed in the north. but Millet can be found in most markets in Nigeria. And the process isn't the same that's true. Millet you grate and cook, pound and mould etc to make Fura, I have forgotten the process now. used to make it with my northern friends just for our enjoyment grin.

and the nunu is fresh milk from cattle or cows. I don't really like it. So i use Peak milk with my Fura back then. I think if you taste a cold Fura de Nunu, you will love it more than kunu. I love it more than Kunu, maybe its cuz I've had too much Kunu zaki grin

yeah u re right! i know u mix the uncooked paste with the cooked one thats wat gives u the proper kunnu taste some people just heat it all up but thats like normal pap. Kunnu has to be watery, ginger and pepper are recipies.

So here is the final entry I will post to Wikipedia:

Kunu is made by first allowing the grain seeds to germinate, then soaking the seeds in water for a few days and blending the soaked grain with sweet potatoes and ginger or pepper to form a smooth paste. This paste is then divided into two parts. One part is placed in a vessel and has boiling water poured on it, then it is stirred to give a thick mixture. The other part of the paste is then added to this mixture and it is stirred some more.

The mixture is then left for a day or two for the grain husk to settle. After this, the husk and other sediment are filtered out of the mixture, and the filtered liquid is bottled for consumption."[/b]

My mum-c makes special kunu for me whenever I am home, seasoned with ginger and a very mild pepperish taste and also thick.

There's HOT kunu, and there's COLD kunu. Hot kunu is more of a meal than a drink. very filling, and tastes absolutely delicious!! Its either called Kunu Gyada or Kunu Tsamiya.

HERE'S HOW -
The hot kunu is prepared with ground rice/ millet; groundnut paste (raw or roasted) and tamarind - also called tsamiya.

First, wash the tamarind and soak in hot water and keep aside.

Then to the main thing - Fresh hot water is poured over the g-nut paste in a pot and mixed into a milky consistency. Then u bring it to boil, and add the ground rice/millet. Take care to keep the mixing stick in motion so no koko forms!!

When the consistency thickens, leave to simmer so the grains are well done.

In the meantime, your tamarind should have turned the soaking water dark brown. carefully pour out the dark liquid and add to the simmering pot. mix thoroughly, add lots of sugar and e-n-j-o-y!!!! grin grin

You can eat this with hot crunchy akara or any other tasty side dish - BON APETIT!!

I tasted kunu once; dont really like it but I heard it replaces lost energy. How true?

Well, I heard in some part of the North Kunu taken with Banana can boast a Man's Libido (Viagra). Though I don't know which variety of Kunu that is being used. Am considering giving it a try. But I was told, the Hausa men use it as a form of Buran tashi. Can anyone confirm this.

has some1 tried thick kunu though not as thick as pap(akamu) wit liquid milk(peak)? if not u are really missing a lot.give it trial and u neva 4get the day u were born. wink tongue grin
