How To Prepare Nigerian-style Potato Wedges by gideonjeta(m): 3:37am On Nov 02, 2018
Potato wedges can go as side for grilled chicken, burgers and many others. It is light enough to be eaten as lunch or dinner.
Cooking time
1 hour

Ingredients
4 Irish potatoes
Red pepper and tomatoes (blended)
Chicken stock
Spinach
Palm oil
Olive oil
Black pepper
Seasoning cubes
Salt for taste

Instructions
1. Wash potatoes with the back and make four halves for each potato.

2. Heat palm oil, without bleaching, in a pot. Add sliced onions and sauté till translucent then pour in blended pepper and tomatoes. When bleached, turn off heat.

3. Place potatoes on a baking pan, garnish with a bit of salt and pepper. Spray some olive oil and put into the oven for about 40 minutes.

4. In a heated dry pan, add the sautéed sauce and add chicken stock. Season with seasoning cubes and salt to taste.

5. Add roasted wedges and cook for 10 minutes, while stirring at intervals.

6. Add spinach and let simmer for 2 more minutes.
