Mr G, unless you don't like it, you can patronise finely chopped tomatoes. That's what I use. Can't remember when last I made stew with fresh tomatoes. The headache is too much for me. Besides, English tomatoes are too English if you know what I mean grin

My sis is so posh now with long manicured nails she no wanna blend fresh tomatoes again cheesy
Soon na canned stew she poured from gallon into plate and microwave she go serve us.
And GboyegaD will be serving us canned spaghetti and parmessan.

Fried tofu (awara) in egg tongue

Really nice, please can you give me a small guide on how you make your own tofu from scratch? Have only been successful once. I tried using lime orange for the separation of the curb on the second try as lemon wasn't available but It failed. And also, is there a particular type of soya beans that should be used? Because last time I used 10cups of bean, but the quantity of tofu I got was really small. Felt like I wasted the beans should have rather opted for soya milk. Thanks, as I await your reply

And also please you can tell me other forms of coagulant that I can use instead of lemon

For me, after washing the soya bean, we then soak it for like 1hr before grinding, filter it and put on fire to boil, you know the water that sits on top of filtered akamu right? Thats the water we pour into the boiling soya milk, it will begin to coat.
Dont forget to put enough water into the soya bean paste before filtering o.

Am sorry for that, you know lime makes the tofu to crumble and . Lemon is better.
I use lemon and even tamarind too. Just that tamarind changes the color to a bit dark.

Thanks very much for your reply. So can I also buy akamu from the market, soak it in water over night then use the water for the process? And also would vinegar work as a coagulant too? Sorry for stressing you with so much questions

Canned food doesn't taste good. I remembered I once tried the mushroom sauce from a can to know if I would like it and it was very tasteless. However, eating it at the cafeteria gave me another dimension to it that I had to learn how to make it.

You can use Alom as well.Any alkaline substance can coagulate Tofu e.g, Tamarind,Lime orange, the akamu water Bintdawood suggested. It seems you're desperate to make it work,I can be of help if you won't mind. Its something a first timer can not do without guide because, even the handling while in the pillow at the final stage needs mentorship hence, you shake it off and waste the efforts.

Yes, i blend fresh pepper and onions together buh not too smooth. I add it when the milk has coated and ready to filter it, immediately i pour it inside my sieve, i will then bring the blended vegies and pour on top, turn it as fast as i could so it touches everywhere. Then i will tie my sieve for the water to drain.
Shikenan. I hope this helps wink

Thanks for the reply. Actually I have been successful on my first try when I use lemon, it was on my second try using lime that I failed woefully. And yes I would really welcome any form of assistance you would like to render oo. Because tofu na like meat to me and it rarely satisfies me. Besides since I left Kano I rarely buy outside anymore as they don't meet the standard

I bought from the African store just once after I moved to my current city. Planned buying a full goat maybe some time in January.

As for Christmas, I am attempting Quail. I know it is delicate as it can dry out very fast since it doesn't have fat but I think it should be worth the experiment.

I don't do beef my side for long now. Don't like the taste. I buy whole, anytime I wanna buy goat and actually, have never asked the lady how much after the first time. I can't tell honestly.

Yes, goat stock gives your jollof diff aroma especially the oil used in frying is used. Perfecto kiss
