OMG cry cry. These pictures are disgusting. The picture in the Op's original post, I can deal with but the ones posted by coogar and cococandy! Oh no shocked shocked sad!

I remember when I stopped eating locust beans because I saw one dirty looking woman dancing in a mortar full of unprocessed locust beans all In the name of processing it. I got home expressing my disgust and told my mum I was never gonna eat 'iru' anymore. She smiled and said only if I knew how palm oil is being processed but I shrugged.

I really can't believe what I'm seeing! It's not about the dirty legs and body anymore but the disgusting and extremely dirty pits and environment it is being made! Looks like they are recycling shyte in a soak away! Please who knows what's next after this mess. I mean, how is that fine finished product gotten?

The pictures Coogar posted are from the western part of the country... They're kinda for commercial production and are usually sited a distance from the house. mostly in farmlands

OP's picture is from the eastern part of the country particularly Nsukka axis.. You'll find that in almost every traditional kitchen in that axis.

So the palm oil we use went through this process, ayama!
No, this is very crude. I have never seen it before. We have oil mills that are used to process palm kernels

I did it,I still do it. Granny sometimes calls me to come home and help her with the processing.
We don't do our this way. we use a long mortar like the one the lady in the first pic is in,then with a very long pestle carved out from the branch of any hard wood.
Its fun,but tiresome. but the reward is usually worth it. Fresh palm oil, free from grease and engine oil like the ones processed in oil mills.

proud of you girl, I know you are a good cook too

Lol. They don't spit. And women hardly sweat like men. Plus it's subsequently going to pass through some intense heat.

be deceiving yourself.....
they sweat, spit & blow their noses in those pits. since the oil is still going to be cooked at huge temperatures, no one cares what happens during the stomping. matter of fact, the more impurities during the stomping, the tastier it gets. grin cheesy

That'll hurt. Palm kernels are hard. Hmmm

Cool. but you just made me wanna dump my Nigerian made Palm oil. So you used the process as a form of buffing your feet callus? Jeez.

I heard dodo ikire is processed same way too. angry

CC: Tayour

There are wines made in similar fashion , traditionally and locally made wines in Europe are made by stomping on grapes ( some of them ). At least the dodo ikere and palm oil go through some form of purification , frying and cooking , before it is consumed.

the oil produced from this method is sweeter than the one produced with machine. Nafdac is aware don't they come from village.

You ARE exaggerating. I have witnessed the process extensively and no one spat or sweated. Ok, maybe in those pits - some people can be terrible. I'm more familiar with the smaller earth and wood mortars that you don't have to live inside like those guys in your picture. Maybe that's why my mom used to avoid "Igbo oil" - she could tell them with her nose.

Very true.

First saw the use of outdoor pits while passing through Ondo state.
