mr oga,I've been cooking since 13years of age,and I'm now above 30,there's no way a non seasoned food would taste great like a seasoned one,and wetin dey remain for this world wey all those doctors never get side effect for,abeg na the grace of God,who go die go die.

There was a time my wife cooked soup with maggi,it was tasteless. After swallowing the first "okele" the second one became an abominationgrin

To the topic...what is appealing to you is not to others...

Food taste better when seasoned or spiced.

I cook with and without seasing depending on what am eating and how I want the food to taste.

There is no need for argument......

Carry out a blind man's test.. It implies cook same food using same heat..same ingredients...same time ...one with salt and the other with salt and seasoning....serve it in two separate labelled bowls A&B ...blindfold fifty persons and ask them to taste...you can interchange the bowl to serve from first repeatedly... Let them tell u which is tastier....

Further point of correction . It is not "called seasoning". Seasoning is a generic term which could mean salt ,Maggi Knorr,curry etc so seasoning does not identify it. If you say "bring some seasoning" ,No way does that mean Maggi or Knorr exclusively it could mean thyme or garlic or ginger


The proper generic name is "STOCK CUBE" or "BOUILLON CUBE" and yes you are correct Maggi is a brand name .

A good alternative is "MEAT WATER"
Maggi stock cubes were introduced in 1908 and as is the case with many branded products the First brand(or Leading brand) is often used in place of the CLASS

e.g

Xerox
Coke
Google
Guinness
etc

Just be sure if you are going around correcting people you have all the facts.

Back to subject. The issue is PALATABILITY and a key ingredient in many stock cubes is MonoSodium Glutamate which actually tastes like salt and COULD be mildly addictive so much that some people will show a very strong preference for MSG foods.

This is an important factor for those who mix feeds for poultry and Fish. Adding salt or Maggi can enhance animal feeding and weight gain

With or without seasoning maggi or knorr if everyone stops using it don't u know it wld add more problems to our society too. By cursing more unemployment nd also affect d economy Cus all dis seasoning are all produced here in Nigeria. So my people cocoyam and yam all na the same no one dey grow on top tree. Use common sense.

I am a woman that cooks without Maggi. Curry, thyme, ginger, garlic and salt are enough. Then crayfish and Iru for traditional meals. I find that cooking is about chemistry. It depends on when you add the seasoning that matters. If you add seasoning when food is at high temperature it absorbs the seasoning more. In fact you will be scared, cause little salt can't spoil the food. Each food has its own flavor, don't kill it with maggi

My mother in law detest "maggi". Her cooking is super, no sentiments.

@OP I will try explaining why. First there are five basic tastes namely:

1. Sweetness

2. Sourness

3. Bitterness

4. Saltiness

5. Umami

You might be familiar with the first four so I will talk more on Umami. Umami is responsible for the savory tastes in foods. The Umami receptors in the taste buds are usually stimulated by glutamates eg MSG. Your maggi and noodles seasoning contains this MSG. However tomatoes, soy sauce, veggies and mushrooms are rich in Umami but not to the extent of your seasonings.

On a second thought I believe Ogiri also stimulate the Umami taste bud. Besides, you can't get the savory/ umami feel if you use salt. You will only get a more salty food.

That is why you say it does not taste the same. Because you have killed your buds with maggi. You don't even taste the food again, just maggi maggi. I have never tried tumeric. Just ordinarily sautéing garlic, onion, tomato and ginger with salt can bring out a heavenly flavor. It's all about when you add your seasoning with cooking. Adding these spices at high temperatures will greatly reduce your salt use. After cooking without maggi for some time, when you taste good that has maggi you can tell immediately. In fact I get headaches from maggi food. If you try my jollof and fried rice without maggi, you will bow.

To be frank it's possible to cook without adding Maggi, I've been married for 6years now and my husband preferred my food without Maggi than adding different seasoning to food.

Do you know how long I/we have been using ginger and garlic?

I know a lot about spices and I know that my taste bud is less sensitive to garlic and ginger.
