Okay, that's insightful. I appreciate your feedback here. It fits right into my "guestimate" of between an hour or 2 like you stated here. The well-made chicken pie look triggered my taste buds and made me to ask you these questions.
By the way, I want you to share (list) your chicken recipe with me (i.e., if it isn't a trade secret which you use for business purposes)... Or just simply suggest a "distinct recipe" that I can use for the fillings of the pie. I've NEVER made meat pies or chicken pies before (even though my mum who worked as a medical professional regularly made these colourful and tasty pastries with the kitchen oven for home consumption back in the day (1980s), I never joined her... ONLY to eat). She had colourful cook books got from England or the department stores that I used to flip through but I regret not joining her occasionally then. So, during the coming weekend(s), I want to motivate myself and see how my creative skills will pan out doing this baking.
Also, can an air fryer be used for this chicken pie? Do you use it too instead of the oven?

Ciao. Hello! Im good thank you. Trust you're doing good. Okay for the dough For every 4 cups of flour i use 125g of butter, little salt when im not using simas butter and 1 tbsp of baking powder then water to create a dough. I'll keep and allow it to rest (breathe)😂 For the fillings I cook and debone my chicken (breast preferably) and put in a food processor or mortar to grind into thinly slice. Keep aside then peel my onions and dice into smaller parts, then stir fry in a pan with little oil or butter. I add little scotch bonnet cuz i dont like it spicy, go on to add my grinded or processed meat, spices and seasonings the stir until it looks golden and dry with a texture similar to cotton candy, If its done, i then allow to cool while i prepare to start making dem pies💃🏾 i break egg in a small bowl and a brush to bind the edge of the pie. I cut the dough into smaller pieces,roll out,place on the cutter, add the already made fillings, brush egg on one side and cut. When im almost done, i reheat my oven and place my baking sheet, place them on top and egg wash for golden glaze. it's not a trade secret actually so don't worry. Good luck with your baking, and I hope your creative skills shine. Dont hesitate to reach out if you need any tips or guidance. As for the air fryer, don't have one, so I'm not sure if it can be used to bake the pies or how they would turn out. Oven baking works best for me! |

How long does it take to do all these Chicken pies from start to finish? (That is from kneading of the dough to the end of baking in the oven). Thank you so much An hour or 2, it depends on how fast you are and the quantity you know. |

Just a quick NOTE here though, and I want YOU to re-edit the WRONG information in your post that has been there since April 2024. Let me school you with some insightful evidence.
YES, the fried beans delicacy is called Kosai in Hausa language, even right up to the Northern parts of Ghana (Gonja) due to the influence of long-distance Hausa traders (or the assimilated Agalawa or Nigeriene Tuareg caravan traders of Katsina and Kano in Hausaland) in that area of Ghana.
But "Akara" is an original Yoruba word for fried bean cake NOT Pidgin English, and Akara is even CLEARLY listed in the first ever Yoruba to English dictionary of 1833. You can easily download a FREE PDF copy of the oldest Yoruba to English dictionary via a Google Search online. A lot of Yoruba words are being used as loan words (borrowed) by some other ethnic groups and folks in Nigeria due to their interactions as a result of British Colonialism, such as "Egusi" and "Oga" which are also listed in the same 1833 Yoruba to English dictionary. But these Yoruba loan words CANNOT be found in the oldest dictionaries of these other ethnic groups indicating that they borrowed it from the Yorubas. These ignorant younger ones from some of these ethnic groups like the Ibos had to be shown these CLEAR facts recently in 2024 when they started claiming that Egusi is a word from there ethnic group but knowledgeable Yoruba folks uploaded clear screenshot and documents showing that Egusi is not just a Yoruba word but has been eaten for centuries as a soup thickener.
Aka-ra (simply means to COUNT and BUY) Aka (Count) Ra (Buy). The process of counting and buying the fried bean cakes.
Alubosa for instance is a loan word used by Yorubas just like Albasa is a loan word used by Hausas but which is of Arabic origin. There are some Yoruba words that also have Arabic loan derivatives and are used interchangeably. This is a result of the strong presence of Islam in Yorubaland (Oyo Empire) for over 500 years now after it was brought by Islamic traders and preachers from Mali Empire, long before Uthman Danfodio's great grand parents were even born. So, it is always good to keep these facts in mind about the origins of words.

That's truly impressive. Egusi (melon) with Tuwon shinkafa... What vegetable(s) was used to make that Egusi soup? Is it Zogale (Moringa) or what? I never knew that some of you folks in Northern Nigeria add Egusi to your soups. While traveling internationally, I like to sample unique cuisines from around the cultures I come in contact with. It'd love to try your Tuwon shinkafa and Egusi combo on any of my leisure travels to the North.
Second are you an original Hausa (Kanawa) OR a non-Hausa like Aisha Yesufu. Spinach and Ugwu leaf was used in the preparation. That's incredible, do try it someday😊 I'm Hausa from Kano state |
