Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute. Cooking Directions Start cooking the shaki first with as little water as possible (see video below) as it is the toughest meat in the bunch. This soup should have as little water as possible so add small amounts of water at a time and top it up as you cook. When the shaki starts to curl, add the dry fish and stockfish. When the shaki is almost done, add beef, stock cubes and some of the onions and cook till all the meat and fish are well done. Set these aside. In another pot, pour the palm oil and heat it up. Once hot, add the remaining onions. Fry the tatashe peppers till there's no more water in it. This should take about 15 minutes. Add the locust beans, crayfish, and stir very well. Add the cooked meat and fish, stir very well. Pour water to the level of the fish and cook until tender. Pour in the seafood except the shrimp and let it cook for 3 minutes. Add the okra and the remaining ingredients. Stir and cook uncovered for about 3-5 minutes or until the shrimp turns pink and serve with any swallow.

Cooked without any oil or onions, it is known as Ofe Nsala by the Igbos - one of Nigeria's largest ethnic groups. Ingredients: 1 big Catfish 8 small pieces white yam 5 Utazi leaves 2 small seasoning cubes Small piece of ogiri okpei A handful crayfish Habanero pepper (to taste) Salt (if necessary) Preparations The first step, peel the yam cubes, wash and boil. After 10 minutes, drain the yam slices then pound till it is a smooth paste with a mortar and pestle. If you do not have a mortar and a pestle, you can put the boiled yam cubes in blender or food processors, add a little water, until it is a smooth paste. (You can use the water used to cook the yam). Set the pounded yam aside for later. Remove the entrails of the dried fish, wash with hot water, season with salt, a spice cube. Cook it until it is soft, Place the cleaned-out catfish in a pot, pour enough water to cover the fish, add seasoning cube, and salt. Cook for 10-15 minutes. Add the pepper, crayfish, Utazi and Ogiri. Leave to simmer for another 5 minutes. Add the yam paste bit by bit so that they can dissolve without turning into lumps. Leave to simmer for a short while. add salt and the last seasoning cube.
