Honestly I don't know the name unfortunately my mum is late I would have asked her,she taught me most of the Igbo delicacies I know. Its specially made for rice alone.

INGREDIENTS:

Ugwu- 50n
Saint leaf- 50n
Curry leaf- 50n
Water leaf - 50n
Onions
Pepper
Okpeye- 50n
Egusi- half milk cup or milk cup(depends on how you want it)
Crayfish- 50n
Smoked fish(it gives me the required taste,you can use any fish but should not be fresh)
Meat( optional)
Seasoning cubes and salt.
RECIPE:

1.Pour your red oil in a hot pot,allow it to fry for a long time until its almost like groundnut oil(same way you fry oil for ayamase sauce) Be very careful as it will be very smokey...

2. Allow the oil to cool off then add the sliced onions and grounded egusi fry for like 5mins then add little water or meat stock if any.

3. Add your seasoning cubes,crayfish,smoked fish or meat,okpeye, pepper and salt to taste then stir.

4. Add the sliced water leaf first ,then the curry leaf,saint leaf and lastly the ugwu leaf. Allow it to steam a little then voila your soup is ready.

Note: You eat it with white rice( I've not tried it with any swallow I don't know how it will taste like)

Oh my love for this Nsukka delicacy..

A mixture of ugwu leaf,saint leaf,curry leaf,water leaf and egusi. The taste is on another level and yes the palm oil was actually bleached.

I remember as a child who was so innocent back then,I decided to steal pap from my younger sister's flask who was just a toddler.

Ol boy... As I set mouth to drink the pap,the kind burn wey the pap burn my mouth ehn! Is better imagined... It didn't stop there oh! Because of the shock I mistakenly poured more of it on my hand and I had to keep hiding my hand away from mum's prying eyes(omo that woman na detective) Las,las she catch me sha I still come lie say na baby food I dey make as per sharp barrack pikin if not she for kill me...

Till date I still have that scare as a reminder and did I steal again? Never oh! grin

Ukwa has its own unique teste and I'm sure when you try it you will love it.

How I prepare my own.
Ingredient
Ukwa
Salt
Dry pepper
Maggi
Dry fish
Shaki and roundabout (optional)

Preparation.
Step 1: wash your Ukwa and boil using pressure pot (because it takes long to cook) put inside your p/pot and cook for 10min bring it down and allow to cool off.
Step 2: On another pot you cut your roundabout and shaki into smaller pieces, wash and boil add your pepper, maggi salt and once the shaki and roundabout is soft add your washed dry fish then allow all to cook very well.
Step 3: remove the cover of your pressure pot to make sure that the Ukwa is soft then continue cooking (make sure their is still water as you don't want waterless ukwa grin)
Step 4: add the cooked shaki, roundabout n dried fish to the already boiling Ukwa allow to cook for 5 - 15min, taste to know what next to add like salt/maggi/pepper, add red oil then allow to cook for another 10min.
Your Ukwa is ready.

I actually don't know there are Igbo speaking people in Kogi before. We learn everyday sha.

I've always thought Kogi comprises of okun, igala, Ebira and a handful of Nupe people.
There are oh! Infact from my dad's village in Kogi state to my mum's in Enugu state you can get a bike that will take you for like 300 or 400n. There are also Igala speaking Igbos in Enugu state,strange right cheesy
