UK's shortage occupation list does not really reflect the reality on ground. Even with the shortage occupation list, employers are not very open to sponsoring applicant from outside the UK. Except you are in the medical line (care worker inclusive), tech, consulting & finance and some other professions, it is unlikely that an employer will sponsor your visa from outside the UK. The main problem is you need a job and sponsor to get a UK visa, unlike the Canada Express Entry

You schooled in the UK for both degrees and that should counts for something. I also did my Msc here in the UK and got my 5 years skilled worker visa.
