When I soak even for short period, it ends up scattering in stew

If I don't soak ..... it's too tough to chew without being properly seasoned

After cleaning them, just fry them on both sides for a bit in the oil that you’re going to use to make your stew (on a low heat because your don’t want your oil overheated), take them out, make your stew (as you would) then add them back to allow them soak up/absorb the flavor.
That way, they can soften up (to an extent sha) without breaking up.

I like them chewy and spicy though.

This fish, I used it for the first time last week. Just one dry one among my usual. Soaked, washed and cooked for 2 hrs ( slow cook). Dished and nobody touched it. I was like, "you people sef, give me my fish jor". Do you know I couldn't bite into this fish? It was like stone. I just respected myself, packed and binned.

So how do people eat it?
I obviously have no clue.

I wouldn’t describe eja kika (smoked hake) as dry. (Well, it depends on how long they’ve been dried after smoking)
They’re not as dry as our usual azu ojii (catfish), and not as soft as smoked mackerel.
We usually buy freshly smoked ones that are a bit dry on the outside, and softer on the inside.

Hmm, I expected something like that.
Bought it from Ghanaian shop. Maybe was dried Ghanaian style. Don't even know if it's sweet or not.

I fried them a bit, then spiced and seasoned and enjoyed them that way. Deliciously spicy!

I bought a tuber of yam for 1,700 after much negotiation and dragging with the seller. The guy wasn't going to sell for 1,699.99 sef.

If I don't cook stew on a Saturday morning, I always feel my Saturday is not complete ( except when I have a function at a far distance and I need to drive out early)

Here's my Saturday ẹja kika stew for serving normal Thai rice, ofada rice, yam and any other food as the spirit leads in the coming week grin
