I use low heat to cook the sauce. If it gets burnt, game over. I have to THROW it away.

I can’t STAND BLACK stew color! Yuck!

I taste the “boiling stew” from time to time to check for “rawness”!
You can also perceive the aroma of the stew when the rawness is leaving the stew.

After grinding your tomatoes, instead of boiling it till the water dries which takes forever, just bring to a boil and pour into your colander(sieve) pass the boiled tomatoes through it severally until the water coming out is clear.. Then let it stay and drip off the remaining water. Then starting frying. Shikina.

Not just about the vitamins cos the B and C vitamins that tomatoes are rich in will die off from the boiling anyway, (remaining the A, D, E, K , Which aren't water soluble), won't the tomato particles go with the draining too?
You will loose much tomatoes draining. Even if it's just tomatoes you are boiling, the flavor will go with the water if you sieve.

My advice is to not add water while boiling. Even adding water while grinding should be limited.

As long as heat comes in contact with food, we lose most of the nutrients. But draining takes away much more. If you don’t add water, your stew becomes concentrated and thick. You will have very little sauce and LOTS of meat in your pot.

Best to replenish your dried stew with some chicken or beef stock in the final phase of cooking.

Our “daddy” decided it was time for fresh fish pepper soup! Lots of “loffin” for a bowl of “SWEEEEET FISH PEPPER-SOUP” all night.

Oh yes o!
It helps a lot to get a break from kitchen duties.
After a while you get tired of cooking. Especially adding a hectic schedule of work with family schedules.

When the family grows, cooking everyday becomes a challenge. Some days, I just want to relax and pamper myself. Or you will age faster than your great-grand ma ke!

Abeg, I go get time go shopping for bargains in clothes and shoes depts, watch TV, go to my favorite Disney /Broadway concerts like “The Lion King”, sleep or do manicure/pedicure/facials.
