I've never store soup (stew) in the fridge before, I usually warm everyday till it finishes but I want to try because of this fasting period to be used for long especially for the sahur (early morning food). how do I go about it? must I freeze it?
After cooking, put it in a bowl while it's hot. Keep the bowl open till the soup/stew is cold or slighting warm then cover it and put in the freezer.
When you want to eat if it's block, bring it out put the bowl in a pot and pour in warm or cold water. Keep it for some time to melt then take a portion of it and put in a pot to warm while taking the remaining back to the freezer.

You don't eat semo or garri

I do. All of them. Poundo, semo, garri, amala, plantain and cocoyam fufu

Except cassava fufu that I’ve never tried.

There are white and brown ones. I like both. I think the aroma of the brown ones is stronger and intensifies when fried. They have a mild taste but it is very difficult to describe. I love the aroma and that's why I love them in my sauce or salad. smiley

The beans are here. Soaking in water. cheesy

Nice. cheesy

That's how my dad thought us. We have always fried our beans with fresh tomatoes and pepper, except money no day. The first time I saw a woman cooking the normal way, I was surprised

Maybe fried beans is a Delta State thing. I'm Delta (Warri). In Delta the normal way na fried. The Palm oil method na hostel students, youth corpers and batchelor way. So I thought but I now know better.

Yes, mostly. Based on recipes of Nigerian stews I've seen here I can say the differences are always quite subtle.

I'm still waiting to eat a meal prepared by a Ghanian born and bred there o. I find your meals fascinating. I want to taste that Kontomire sauce with yam. One day is one day sha.

I made this some time ago.
Some squid and shrimps soaked in butter milk and thereafter battered then fried.
It didn't exactly come out as I would have loved, as I dint follow the measurement for my batter.

My favourite soups in order of preference:
1. Okro

You nailed this down to the wire. Perfect outcome. 100% sea food save for the kpomo.

I particularly love the way you achieved this without scattering the fish as a result of turning and that is because there is enough soup.

It is a common mistake to overload the pot with fish with little soup, at the end the soup will be too thick and all the fish scattered leaving just bones.

Achieving wholesome fish in soup like this and egusi is a particularly selected skill and you've got it. Well done.

thanks. you seem to love swallows too cheesy
however to prevent scattering the fish in the pot of SOUP, I don't turn with a spoon, but use a turning stick (abeg, whats the english word for that again?)
For my fish STEWS, I don't even turn with anything, but I just carry my pot using the handles and shake the pots gently, several times during the cooking.
Fish doesn't need to stay on fire for long anyway, so sharp, sharp its cooked and ready to eat.

pls, how did you get to put those stars on there?
