I've never tried Linux Mint but I'm happy with KDE Plasma or awesomeWM, I like the dark theme in Plasma but Linux mint is good too.

What are the things she wants you to work on ? Are they of grave concerns ? This is forever, could be thinking twice before entering the union. Maybe make yourself scarce if she's not really serious.

I doubt they can in CV, but you can start with Windows for now, in the future just have Linux in plain view and yes you can update. I've used it for 7 years plus, it's very stable but I'll admit it can be complex too sometimes, I'd advise using Kubuntu and Plasma it's like Windows.

It won't be a joke, if you posted the same.

Why not fire questions, so 8gb is not bad but for heavy duty coding 16gb is the standard but if you can start with 8gb and upgrade when money comes then that's fine, usually the extra ram could be around 15 -20k difference. Linux is an operating system, it tends to be low on memory usage compared to windows, and is a good OS for coding since most of the servers are Linux based. But if 8gb is all you can afford then you can go with that.
