In my English class, I was told that a complete sentence begins with a capital letter and ends with a full stop.
Now to the issue:
Genesis 1:27 (NIV)
So God created mankind in his own image,
in the image of God he created them;
male and female he created them.
That verse started with a capital letter and ended with a full stop, meaning it's a complete sentence, a job done!

Again Genesis 5:2 states: "Male and female He created them, and He blessed them and named them Man [or mankind/Adam] in the day when they were created"
Another confirmation that two people were created, male and female.
Moving further to Genesis 2v18

18 The Lord God said, “It is not good for the man to be alone. I will make a helper suitable for him.”
What happened to the woman created?

19 Now the Lord God had formed out of the ground all the wild animals and all the birds in the sky. He brought them to the man to see what he would name them; and whatever the man called each living creature, that was its name. 20 So the man gave names to all the livestock, the birds in the sky and all the wild animals.

But for Adam, no suitable helper was found
Where was the woman?

21 So the Lord God caused the man to fall into a deep sleep; and while he was sleeping, he took one of the man’s ribs[g] and then closed up the place with flesh. 22 Then the Lord God made a woman from the rib[h] he had taken out of the man, and he brought her to the man.
Another woman formed from Adam's rib!

That is why you should use kjv to read for a little wrong and misplaced word is all it takes to mislead a person.

Genesis is written in a certain pattern which is it states the facts first, then it explains how the fact occurred as seen in Genesis 1:1 where we are first told that God created heaven and earth.

Then the remaining verses explained the step by step process of how and when God created the heaven and the earth and the other things in them.

So, Genesis 1:27 simply did the same thing by stating the fact that God created man who is male and female. Then chapter 2 explains how and when.

Then Gen 5:2 is simply just re-emphasizing Gen 1:27 which is why you see it said in verse 1 "This is the book of the generations of Adam. In the day God created man".

And who is man?
Answer: male and female man.

And chapter 4 clearly states that Eve was Adam's only wife. No "wives" mentioned there
