So go with honesty. If she has told you she is interested, simply tell you are not. It is not rude to tell someone you are not interested in them romantically. It saves time and hurt feelings in the long run.

If you know she is interested but she has not said so, just "friend zone" her like someone suggested. Say the word friend when referring to her in her presence as often as you can. She will eventually get the message. If she doesn't, you've got a stocker on your hands.
