The triangular-shaped flaky pastry filled with spicy potato, vegetables, chicken or beef filling is a finger food snack popular among the ‘Small Chop Gang’ in Nigeria. It’s there in every party and usually the first to finish. Wherever the party holds, you name it and Samosa will be there! A good Samosa should be crispy and most importantly, it should not be oily at all. This is one of those treats that you should make for special occasions or over the weekend when you want to have some fun in the kitchen. If you’re looking for an amazing party/game day appetizer or snacks, try this Samosa recipe here and you won’t regret it. It comes together easily without compromising the taste and flies off the table too quickly. One of the best you’ll ever have!

Without further ado, let’s quickly head to Tiger Kitchen and whip up something lit.

Ingredients

The dough:

120g flour

3 tablespoons of Vegetable oil

A pinch of salt

Tiger Cinnamon Powder

1 tablespoon granulated sugar

Warm water


The filling:

2 medium Irish potatoes

2 handfuls of green peas

Tiger Thyme

Tiger Curry Powder

Tiger Ginger Powder

Tiger Chilli pepper Powder

1 carrot

200g minced beef/meat

2 cooking spoons of vegetable oil

Larsor Beef Seasoning

Onion

Salt to taste

The Procedure

Making the Filling

-Wash and peel the Irish potatoes and carrots. Dice into tiny bits, add green peas. Add a little salt and cook for about 5 minutes. Take off the heat once they get soft and set aside.

-Heat Vegetable oil in a small pot, add Onions, Tiger Curry Powder and Tiger Garlic Powder, and stir for a few seconds.

-Add the minced meat and stir-fry until it turns to a pale colour.

-Add Larsor Beef Seasoning, Tiger Chili Pepper Powder and salt to taste.

-Add the cooked vegetables and mix on medium heat for about 3 minutes.

The Dough

-Pour flour into a medium mixing bowl.

-Add warm water, salt, sugar and vegetable oil. Mix until you have a smooth and stretchy dough.

-Cover the mixture with an airtight plastic wrap and leave to breathe for 15 minutes, and then knead the dough to make it stretchy.

-Use a rolling pin to roll out the dough to a thickness of about 2-3mm.

-Cut the dough in circles. You can use the tip of a round glass bowl if you do not have a circular dough cutter.

-Cut those circles in two halves and smudge water on the straight part of the semi-circular dough. Don’t close it yet.

-Put a spoonful of the filling into the dough. Repeat until all the dough is finished. Heat vegetable oil in medium heat.

-Make sure the oil is not too hot for it. Fry until the colour changes to light brown.

-Place the fried Samosa on a paper towel to drain off excess oil and enjoy hot!

You can get creative with Samosa and make your unique filling. This yummy, easy and delectable snack, goes perfectly well with a chilled bottle of May Bach White wine.

Akara and Pap is a typical weekend breakfast in every Nigerian home. It is also a popular Nigerian street food made from deep-fried bean batter. Every morning and evening, Akara sellers are seen frying their commodities with clusters of people waiting to eat them hot. Akara is also known as Bean Fritters amongst other slangs that Nigerian would rather nickname them by. It can be eaten as a snack, appetiser or as a breakfast dish, served with Vegetable Sauce, Pap, Custard or Oatmeal.

Akara is also a superb street food as sellers can be found frying them at different hours of the day. Foodies let’s get the ball rolling at Tiger Kitchen.

Ingredients

3 Cups of Beans
Onion
Tiger Ginger Powder
One raw hot pepper (Ata rodo) – chopped
One Bell Pepper
Salt
Vegetable Oil for deep frying
Direction

Pick and wash your beans, then soak in lukewarm water for 5 minutes. You can use your hand or electric blender to peel the beans. To achieve this, pour the beans in your electric blender and gently control the pulse function of your blender until the peel or chaff is completely out of the beans. When this is done, go ahead and blend with a mill or the electric blender until its smooth and set aside.

Blend the bell pepper, onion and scotch bonnet roughly with as little water as you can and set aside.

Now, you need to whisk or use a wooden spoon to stir your Akara batter for about 10 minutes or until the batter is almost double the size. This allows you to incorporate air for a fluffy and plump akara. If this is not done properly, you may come out with a flat akara.

Next, add the blended pepper, Tiger Ginger Powder, and Salt into the batter and mix lightly.

Now, set a deep frying pan on medium heat and add enough vegetable oil to deep fry the Akara balls, make sure the heat isn’t too high and not too low either. When it’s hot, begin to scoop the batter into the oil.

Fry till golden brown, this should take 3-4 minutes, remember to turn them over for even frying. Lift the Akara balls out with a frying spoon and drain on kitchen paper towels.

Repeat the process until everything is fried.

You can opt to genuinely enjoy it with vegetable sauce, pap or oatmeal.

The moment you master the basics of herbs and spices, you will become a better chef, and your loved ones will be impressed. The recipe is simple; proper use of spices is the icing on the cake, here are some basic rules to undoubtedly help you bring out their maximum effect.

When to spice dishes

Add the exotic spices at the beginning of meal preparation to undoubtedly enhance the aroma. Spices like ginger and garlic is best added early in the cooking process. Herbs may be included towards the end for more distinct flavour, or at the beginning for more blended flavours. Abacha and Ugba are known as African salad, a Cassava based dish from the Igbo tribe of Eastern Nigeria. Abacha is simply dried shredded Cassava while Ugba, on the other hand, is fermented African oil bean seed. The African salad is one delicious meal that you will fall in love with after a first taste. The native taste is so distinct, making it palatable to be enjoyed by all tribes in Nigeria. This palatable dish is best served with Palm wine which is a local Nigerian beverage, although you can enjoy it with any drink of your choice. Let’s get to the kitchen to get this dish rolling.

Ingredients

1 cup, Palm Oil
6 Garden Eggs, diced
400g Abacha, (dried shredded cassava)
Vegeta Onion
100g Ugba, sliced
1tbsp Garden Egg leaves, finely chopped
1/4 Tsp Ngu water (Ngu is the ashes of the palm fruits that can replace potash)
Iru (Optional)
Diced Kpomo
Tiger Ehuru Powder
Fresh Fish
Larsor Fish Seasoning
Tiger Chilli Pepper Powder to taste
2 tbsp ground Crayfish
Boiling water
Salt to taste

Procedure

Firstly, clean and gut your fish, then marinate with salt, Tiger Ehuru Powder, Larsor Fish seasoning. Leave to marinate in your fridge or a cool place for at least 30 minutes. Cook the fresh fish, fry and set aside.

Rinse the Ugba with warm water to rid it of dirt, soak the Abacha in cold water for about 10minutes, drain out the cold water, pour boiling water over it and quickly drain it, let it sit in a colander for about 5minutes.

Pour the palm oil into a clean dry pot, add the Ngu liquid and mix until the colour begins to change from orange to yellow and the mixture becomes a thick paste.

Add the Crayfish, diced pomo, Tiger Chilli Pepper Powder, Vegeta Onions, Tiger Ehuru Powder, Ogiri and Larsor Fish Seasoning, and mix thoroughly until well combined.

Now, place the pot on low heat, add the strained Abacha and adjust for salt if necessary. Mix well and put off the heat as soon as the Abacha is warmed up.

Garnish with chopped Garden Egg leaves.

Add salt to taste

You can mix in your chopped Utazi leaves at this time if you wish or garnish with it. Enjoy grin cheesy

Add the Crayfish, diced pomo, Tiger Chilli Pepper Powder, Vegeta Onions, Tiger Ehuru Powder, Ogiri and Larsor Fish Seasoning, and mix thoroughly until well combined.

Now, place the pot on low heat, add the strained Abacha and adjust for salt if necessary. Mix well and put off the heat as soon as the Abacha is warmed up.

Garnish with chopped Garden Egg leaves.

Add salt to taste

You can mix in your chopped Utazi leaves at this time if you wish or garnish with it.

Abacha and Ugba are known as African salad, a Cassava based dish from the Igbo tribe of Eastern Nigeria. Abacha is simply dried shredded Cassava while Ugba, on the other hand, is fermented African oil bean seed. The African salad is one delicious meal that you will fall in love with after a first taste. The native taste is so distinct, making it palatable to be enjoyed by all tribes in Nigeria. This palatable dish is best served with Palm wine which is a local Nigerian beverage, although you can enjoy it with any drink of your choice. Let’s get to the kitchen to get this dish rolling.

Ingredients

1 cup, Palm Oil
6 Garden Eggs, diced
400g Abacha, (dried shredded cassava)
Vegeta Onion
100g Ugba, sliced
1tbsp Garden Egg leaves, finely chopped
1/4 Tsp Ngu water (Ngu is the ashes of the palm fruits that can replace potash)
Iru (Optional)
Diced Kpomo
Tiger Ehuru Powder
Fresh Fish
Larsor Fish Seasoning
Tiger Chilli Pepper Powder to taste
2 tbsp ground Crayfish
Boiling water
Salt to taste
