If you are not used to the “funky” aroma of Ogiri, you might be taken aback, but the deep savouriness it brings to dishes, especially if first cooked in oil, will leave you impressed. This is one ingredient in soups you can’t miss even if you were miles away. The aroma is bound to keep you on your toes while cooking. Iru is incorporated in soups like Egusi/Oha soup, Efo Riro, Onugbu soup, Ofada sauce, and a crucial ingredient in the preparation of African salad (Abacha).

Ever wondered how these local seasonings are made? Well, we are glad you stumbled on this post as we will show you how these various nutritious and healthy local condiments are made.

Iru/Dawadawa

Sort the locust beans to remove any foreign particles. Soak the locust beans in hot water and leave for seven days or boil for about 8 hours.
Place the seeds in a mortar and pound with a pestle to remove the hull from the seed. Sieve off the chaff. The cleaned seeds are then steamed and spread inside a calabash filled with wood ash and covered with leaves.
The calabash is covered and wrapped with clothes or sack for about 24 to 36 hours for fermentation to take place. Dawadawa is then pressed into cakes, in the form of discs. This can now be used as a condiment for soups or stews. This seasoning is a rich source of protein, vitamins, and other nutrients.
Ogiri Okpei

Ogiri Okpei is a fermented, mashed and compressed locust beans, mostly used by the Igbos.

The seeds of choice are first sorted, washed, and cleaned thoroughly in clean water. Note; you can use Egusi seeds, fluted pumpkin, Mesquite seeds, castor oil seeds, or sesame seeds.
Cook the seeds until they get softened so that the seeds coverings can easily peel off for easy removal. Afterward, wash the seed and pour it in a sieve to drain excess water.
Then add the seed into a vessel then cover with local leaves like plantain leaves and allow to stand for at least 4 days to undergo fermentation.
It is optional to place the vessel or jar under the sunlight during the process of fermentation to hasten up the fermentation process.
Once the fermentation process is complete, ground the fermented seeds into a smooth thick paste, then mould into small balls and allow to dry under the sun.
Once the Ogiri okpei is sun-dried, it is then ready for usage.

This is a mouth-watering and easy Nigerian delicacy, it is incredibly popular. Babies and toddlers love it; the sliminess helps them swallow with ease. One of the beauties of making this specialty is that you can prepare it all your own way; with or without adding vegetables. Pumpkin leaves (Ugu) and Bitter leaf are the most common vegetables used to prepare this sumptuous meal. However, today we decided to prepare it with our Tiger Basil Leaves and it came out amazing. Let’s head over to Tiger kitchen for an amazing cooking experience.

Ingredients

1 Cup blended Ogbono
4 Cups stock Beef
Meat Tripe, cow skin or Fish of choice
1 Cup Stock Fish
Salt to taste
Larsor Beef Seasoning
Tiger Chilli Pepper Powder
Vegeta Onion
1 Tbsp Crayfish ground
Ugwu
Tiger Basil Leaves
3/4 Cup Periwinkle
1/3 Cup Palm Oil

Instructions

Grind your Ogbono seeds finely and set aside…

Wash all the meats you’ll be using thoroughly.

Then, set a big pot on low heat, add in the tougher meats, in this case, the Shaki, Cow leg and Ponmo, add Vegeta Onion and Salt to taste. Cover and let it simmer on low heat for 20 minutes. This helps to release the meats’ natural juices.

Cut the beef rinse and throw into a pot. Add Salt, Larsor Beef Seasoning, Vegeta Onion and Tiger Chilli Pepper Powder Leave to boil for about 20 to 30 minutes depending on how tender you want the meat to be.

Once the meat is almost done, add the stockfish and cook for 5 minutes or till soft.

Add the blended Ogbono seeds to the boiling meat: Be sure you have enough stock in the pot. Stir very well until the Ogbono is well dissolved in the stock.

Stir in the periwinkles, crayfish, and Palm Oil and leave to cook for another 5 minutes.

Now turn down the heat then add Tiger Basil leaves. Leave to simmer for another 2 to 3 minutes. Then add Pumpkin and cook for 2 minutes. Serve with your favourite swallow like Eba, Amala, and Pounded Yam.

We were already on a 14 days ‘Stay At Home’ and Easter met us still on lockdown, and when it’s time to cook, it’s really a tough one considering having to deal with kids and their tantrums. Although cooking is a fantastic family activity, and there are many ways to get kids involved no matter how old they are, rather than play all day long! These steps are just what you need to get the kids involved in the kitchen.

Begin with Appropriate Expectations: Before starting anything, you must have the appropriate expectations of what the children can and cannot do at their age and level. It’s also a smart idea to have another adult in the kitchen to help you keep an eye on your young chef.

Measure and Pour: Young kids can watch as you measure wet and dry ingredients, explaining the terms “cup,” “teaspoon,” and “tablespoon.” Once you level the dry ingredients, your child can pour them into a bowl. This is a great time to practice counting (to keep track of how many cups or teaspoons are already in the bowl). Now that we no longer doubt that Corona Virus outbreak has gotten to Nigeria and we would enter 14 days of isolation, this is not a time to be depressed but stay thankful to be alive. So, take this as a guideline and a host of suggestions on how to stay sane. Let’s get to it immediately.

Be Regular: Whether you live alone or are under quarantine with the entire family, 14 days of homebound life requires some semblance of a schedule, daily exercise, and a working routine. Try to get up around the same time every day, say your prayers, do some workout this time, meet your daily quota of steps whatever it takes to get your heart pumping. Whatever does it for you, get moving. Walking not only counts as physical activity but also provides some mental health benefits. Eat right, get at least 8 hours of sleep daily and drink lots of water.

Work from home: If you can work remotely from home, the lockdown should not grind the wheel of the industry into a total halt. You could set up a central communication hub so that you can collaborate with your team while in quarantine. However, strike a balance, do not overdo this. Make sure to talk 3 minutes walk/stretch for every 30 minutes you sit.

Stay Up-To-Date With Trends: This is where you put your positive use of social media to test. Join webinars and Facebook Live Sessions to keep up with the latest industry trends, upcoming soft-skills training program, and tips that will help you through your remote working process. When it comes to hobbies, play puzzles to help clear your mind and offer a respite from your usual screens.

Clean Clean Clean: This is the best time to clean frequently touched surfaces daily with a regular household cleaner followed by a disinfectant, you already know why…lol. In addition to bathroom surfaces, tables, and countertops, don’t forget light switches, faucets, and sinks, cabinet handles, doorknobs, phones, and keyboards. Go through the bookshelves and thin out your collection, weed out old board games, get ruthless in the closet and toss anything that hasn’t been worn in the last year.

Remember that this is a time to stay away from other people until instructed by the authorities. No cookouts, no owambes, no play-dates, and no face-to-face dates.
