I want to ask if its safe to go for visa interview more than 120 days to class start date? Has anyone attempted interview more than 120 days to start date and got an approval?. What happened is that the earliest date I'm able to schedule at the moment is August 17 while classes resumes August 15, I contacted school to give me a week extension but they declined and asked me to defer to spring instead.

I guess you can...But the consulate/embassy won't issue you a visa until at least 120 days to your program start date.

Which of these would give me a better leverage.

If your uncle have enough money to cover your expenses then use only his name.Adding your name may seem your uncle does not have the ability to sponsor you.But during the interview you may as well add that you have your personal savings which will boost your chances of getting approved.
