@bece

I think you either have not kneaded it enough ( to make it more elastic) or it is too dry.When things are dry then they often need more water.

It could be as a result of you putting too much of cmc into the fondant. Try not to allow your ingredients to be too much, and i bet u'll have a very smooth fondant.

Ur fondant melt or weep cos of
1 maybe u covered ice cold cake that is straight from the fridge or freezer. Always allow ur cake †✽ be at room temperature befor u ice n cover with fondant
2.Too much glycerin in ur recipe makes fondant weep. I don't use glycerin in my fondant recipe during rainy season I use glycerin in my fondant during harmattan.
Alway make u fondant a day or two before use,infact I make fondant a week ahead of any cake,I always have fondant available.
Don't keep ur fondant in the fridge.

I think the problem has to come from the glucose

From the little I've learnt and still learning I think the function of glucose is to make the fundant stretchy,you should use full and not level measurements for you glucose ma
Just my opinion.
Re: Why Is My Fondant Breaking? by reeny99: 10:18pm On Oct 11, 2016
I use 1 tablespoon of CMC for 1 kg of icing sugar.
water I use 1/4 cup also with the same cup I add just a little more water.

Maybe next time just add a little cmc with small shortening to the fondant.Leave it for some minutes to harden .
