Its the wotk that goes into it. Besides, you can use a cup of egeusi to cook soup for 5 people but you cant use a cup of vegies to cook soup for 5 people.
In the end you need more vegies, you spend more time to prep and that is why veg soup is more expensive.

It has a shorter life cycle so if you don't sell it same day you run at a lose..
Its usually freshly made....

the reasons why the vegetable is more expensive than Egusi is because
vegetable is especially made with fresh peppers and ,it also have higher nutrition and mineral than Egusi.
