She knew that eating it will lead to death.

She was deceived by the serpent that she will not die.

But Adam was not deceived. He willfully sinned against God.

Even today, that most of us are aware of the consequences of our sins, we still sin against God.

They were created in the image and likeness of God. So, they knew. Otherwise, Eve wouldn't have acknowledged what God told Adam.

The only thing the fruit added is the power of knowing that a thing is evil eg knowledge of knowing thatnsleeping with another person's husband is evil.

Or that a thing is good eg helping the blind to cross the road is good.

Knowledge is in stages. To some extent, I believed they knew but no the complete depth. Otherwise, Adam should have asked God what death meant.

For Eve to acknowledge that God said they would die means they knew what death was.

How many have died like they did before them?

Why is their own death different from other's death?
