Recipes I have tried

I tried this today and it came out real tasty.  Thouht I should share with you

Blessings

Ingredients

2 cups whole wheat flour or flour
1 3/4 cups sugar
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups salad oil
4 eggs
1 teaspoon vanilla
3 cups ripe breadfruit, peeled and mashed (1 1/2 lbs)
1/2 cup nuts, chopped

Directions

1   Preheat oven to 375°F.

2   In a large mixing bowl, blend together the dry ingredients.

3   Add oil, and stir well.

4   Beat in eggs and vanilla and continue beating with electric mixer.

5   Beat in breadfruit until smooth.

6   Remove fibrous breadfruit from beater.

7   Stir in nuts.

8   Bake in 3 long pans for 45 minutes.

Did some about 15 mins ago.  Must admit that it takes a lot of cooking oil to fry them.  I used the boneless saltfish.  They are for my daughters church picnic tomorrow.  Have to give some to my neighbor too.  Hope she enjoy them

SALT FISH CAKES   

1/2 lb. salt fish
1 lime
1/2 tsp. sugar
1 tsp. yeast
1 c. flour
1/2 c. milk
1/2 tsp. baking powder
4 red and green sweet peppers, finely chopped
1 piece of hot pepper, finely cut
1 med. sized onion, grated
1 beaten egg
1/2 tsp. thyme

Wash salt fish in lime juice and water. Bring salt fish to boil, strain, repeat and rinse in cold water. Remove skin and bone and mince. Add sugar to water, stir in yeast, leave for 10 minutes until yeast rises to top of water well. Make a well in the center of flour mixture, pour in yeast and milk and mix, beat briskly to make a smooth batter. Add minced salt fish. Stir and continue to beat batter briskly, add chopped green and red sweet peppers, hot pepper and onions. Blend batter well to mix in herbs. Stir in beaten egg and mix briskly for best results. Set aside, covered for 30 minutes. Fry in desired size in hot oil until brown. Fry one batch at a time, drain on brown paper - do not put fish on top of each other.

Ok, I am lazy today so no "fancy" cooking today

Today i am doing PELAU or as some call it "Cook-up or "throw all a pot". 

INGREDIENTS:

1lb rice
½ lb chicken, back ‘n’ neck
2oz carrots
½ lb pigeon peas
½ lb salt fish
2oz green pepper
2 oz pumpkin (diced)
½ lb spinach (chopped finely)
1 bunch herbs (chives)
2oz onion (sliced)
8 cups water
2 tbsp margarine

METHOD / DIRECTIONS:

Soak salt fish overnight.
clean and season chicken.
cut up saltfish small and cook.
Sauté spinach, carrots, pumpkin, onion, pepper, peas and chicken in margarine.
Add cooked saltfish cover and simmer.
Add washed rice and bunch of herbs, stir well.
Add salt to taste, and cook until grains are soft.
Remove herbs.
Serve hot with lettuce and sliced tomatoes.

Coconut Soup

8 ounces grated coconut
6 cups chicken stock
2 tablespoons all-purpose flour
2 tablespoons unsalted butter
1/2 cup heavy cream
salt
white pepper

Directions

Combine coconut and chicken stock in a heavy saucepan.

Cover and cook on simmer for 30 minutes.

Strain through a sieve.

Discard the coconut after pressing down to extract all liquid.

Cream the the flour and butter together and stir into stock with the heavy cream, stirring over low heat, until soup is. thickened.

Season to taste with salt and pepper.

One of my favourite after dinner desserts is a banana fritter covered in tasty golden syrup

Banana Fritters

Ingredients:


1 2/3 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons confectioners' sugar
1/4 teaspoon salt
2/3 cup milk
1 egg
3 bananas, mashed and sprinkled with 1 teaspoon
lemon juice to keep from discoloring
oil for deep frying
confectioners' sugar

Preparation:
Measure, sift and mix all dry ingredients. Whisk together the milk and egg; add to dry ingredients. Fold in the mashed bananas. If too thick add a little milk, and if batter seems too thin, add flour. Batter should have consistency to mound up in a spoon. Heat deep fryer to about 375° or add 1 inch of oil to a deep skillet or kettle and use a deep fryer thermometer to check tempperature. When fritters will cook in 5 minutes, the oil is ready. Drop by spoonfuls in small batches. As fritters brown on one side turn. Drain on paper towels. Keep warm and just before serving sprinkle with cinnamon sugar or powdered sugar. Serve warm with syrup, if desired. Serves 10 to 15.

scalloped potatoes   

This was an easy one for me.  I added a layer of ground beef (trying to get the iron in) in the middle

Ingredients:

4 cups thinly sliced potatoes, about 6 to 8 medium potatoes
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
2 cups scalded milk
1/2 cup shredded Cheddar cheese

Preparation:

In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted. Scalloped potatoes serves 6 to 8.

I am soo excited.  Can't wait to try this tomorrow.  I hope that what we call yam is what africans call yams.

Ingredients
1 medium tuber Yam
1 small bunch of Spinach
1 medium size Fish
4 medium size Fresh Tomatoes (ground)
2 medium size Fresh Peppers (ground)
1 medium bulb Onion
3 Maggi cubes
1-2 cooking spoons Palm Oil
4 cups water
Salt

Preparation
Peel, cut the yam into small pieces and wash
Place in a pot, add water and cook
Add the fish and 2 maggi cubes then cook till yam is almost soft
Heat the palm oil, fry the chopped onion, the ground pepper and tomato
Fry for a few minutes, stir
Add the shredded spinach and the remaining maggi cube, stir
Pour the fried mixture into the pot containing the boiled yam
Add salt to taste, stir - Remove from heat and serve.

I dont use palm oil in my porridge

To be honest I dont use palm oil in anything. I hate it.

surprisingly, this came out good.  I used olive oil instead of palm oil (never heard or see it b4).  The smell doesn't match up to the taste.  i.e kinda smell "funny" but taste pretty damn good.  My sister loved it but my daugter tasted it and grimaced

Oil from olives is meant to be consumed not so? I mean, ignoring the fact that pastors have decided to pour it on heads.

Green Bean Bredie (Lamb and Green Bean Stew)
2 tablespoons oil
1-1/2 pounds lamb, cut into bite-sized pieces
1 cup coarsely chopped onions
1 teaspoon minced garlic
1 teaspoon minced fresh ginger root
1/2 cup water
1 pound fresh green beans, trimmed, cut into 1" lengths
2 medium potatoes, peeled, cut into 1/2" dice
1 tablespoon finely chopped fresh hot chilli peppers
1/4 teaspoon dried thyme
1 teaspoon salt
Pepper


In a large skillet heat the oil over moderate heat. Add the lamb and brown it in batches. Transfer pieces to plate.
Add the onions, garlic, and ginger, and cook over low heat. Return the meat to the skillet. Cover tightly, and simmer for 30 minutes over the lowest heat. Stir in the water, green beans, potatoes, chilli peppers, thyme, salt, and pepper, and bring to a boil. Cover again, reduce heat, and simmer for about 1 hour, stirring occasionally.
Taste for seasoning and serve immediately with rice.

I tried this recipe. its delicious

Ingredients 
225g tuna
1 cup Cheddar Cheese (grated)
1cup chopped onion (Sauté)
Parsley for garnish
tart pastry

Directions 
Preheat oven to 180°C.
spread pastry over tart pan
Spread tuna evenly on the pastry.
Mix cheese and onion and spread mixture evenly over tuna and garnish with parsley.
Bake until cooked ± 30 min and serve warm.

I added a little twist: spread dijon mustard ( grey poupon or maille) on the pastry before the tuna, then thinly sliced tomatoes before you sprinkle the cheese. instead of cheddar, i tried mozarella and swiss.

@Amakaone, let me know how it turns out.

also, what i did, was make my own tart pastry which is better than the store bought one and so easy to make. or u can just buy puff pastry.

here is how to make tart pastry:  (the same pastry can be used for fruit tarts)

 Place 250g (8.8 oz) of plain flour in a large bowl, and add 125g (4.4 oz) of butter. Rub the butter into the flour with your fingertips. Don't squeeze it as this will crush all the air out. Rub it gently, lightly lifting your fingers as you go. Keep going until the mixture resembles fine breadcrumbs.
Add 2 to 3 tablespoons of water to 1 egg yolk and quickly whisk with a fork. Make a well in the middle of the flour mixture and add a little of the egg and water. Work the mixture in, adding more egg and water until it begins to form a ball without being too sticky. If it's too dry, add a little more water.
Shape the dough into a ball. Wrap it in cling film and place in the fridge for at least 1 hour to chill.

thanks for the pastry , do I use chilled water for this or is ordinary tap water ok?

I read somewhere that chilled water makes the pastry better?
I will try take some pics of the finished product and post them if it does not turn out too badly

INGREDIENTS:

10 lb Goat Meat (Mutton)
2 lb (1kg) green pawpaw (diced)
2 lb (1kg) breadfruit
1 lb (500g) flour
1 lb (500g) onions
1/1 pt. (125 ml) cooking oil
gravy browning
bouquet garni
1 lb (500g) cooking tomatoes
6 tbsp (30ml) tomato ketchup
2 oz (50g) margarine
Salt & black pepper to taste
3 maggi cubes
METHOD / DIRECTIONS:

Wash meat, cut into serving pieces and season with salt and pepper. Set aside for ½ hour.
Lightly brown in cooking oil.
Put into large pot and simmer for 2 hours.
Remove from fire. Dice pawpaw, breadfruit and onions and sauté in margarine.
Add to meat and return to fire. Simmer gently and add bouquet garni and whole peppers.
Mix 3 tbsp (45ml) flour to a smooth paste with water, add 2 tbsp (30ml) gravy browning.
Add to stew and continue simmering. With the remaining flour, make tiny dumpling (droppers) and add to the stew.
Add cubes and continue simmering until meat is very soft, and the stew brown in colour.
Remove bouquet garni and hot peppers. Serve hot with bread rolls.

As the family plan to "hang-out" together.  I didn't do no real cooking

I made some cheese/Tuna sandwiches and Bake Jerk chicken

@spiked:  My sister said your recipe came out good.  I'll let you know how it tase. oh, she did say her hands slipped-up with the hot pepper in it. . . . . .errr muy caliente

Its quite a popular delicacy in South Africa though. You can also try it with mashed potatoes. Smiley

FRIED YAM FRITTERS

*1/2 Medium sized yam, peeled.
*1 large onion, grated
*2 teaspoon ground chilli pepper
*1 tablespoon flour
*1 egg, beaten
*salt and dried thyme to taste
*V.Oil for deep frying.



Method:

1 Grate yam into a bowl and add all ingredients except the oil.

2. Heat oil in a frying pan, shape yam mixture into small balls and drop mixture into hot oil. Fry on both sides.

3. Serve hot as a snack.
