Good morning everyone. Yam meals are very popular in Nigeria because they are satisfying and relatively easy to prepare. Today I share 2 of such meals : Yam Porridge and Yam Peppersoup (with cow offals). Both are yummy and can be prepared in a short time. Please see the details below and tell which recipe you will prefer.
sonnie10: My best kept secret since 1979. They can have it now but I won’t tell them that the bottom pot, a little burnt is the best part. One other secret I won’t revile is that the fish must be Bonga fish and you must have periwinkle with shell in it.
Hahaha, you secret is now known. Piom piom is there na

Aroyjunior: But fried doesn't last 12hrs,it was spoil I mean it will draw and become sour.thats why it's tuns me off
True it does not last like jollof rice but if you want it to last then you refridgerate or freeze it....for the frozen one, before heating ( if you are not using microwave) allow it to defrost completely so you can still get that fresh taste.
5gee: It looks nice and I will try it, especially with the smoky sausage taste. I was a bit concerned when you said the vegetables will make it sweet, why would you want your fried rice to be sweet? And which of the veggies will achieve that so I avoid it, apart from the sweetcorn?
Thank you The sweet i meant is not the sugary sweet, i meant tasty sweet .
You see, I live in a ridiculously expensive part of Lagos...
I love zobo so much but it's expensive here yet once you leave Lekki to other parts of Lagos the same Zobo becomes terribly cheap but kinda unhygienic cos it's packaged into used plastic bottles
Since Hausa people sell the red hibiscus petals/flowers in most open air grain markets i'm always tempted to buy much of it and make my own drinks but never knew how and never bothered to check until your post.
May i ask why you chose to make use of pineapple peels people normally throw away? Is there some kinda nutrient in it.
You're welcome.
I totally agree that the hygiene level of most Zobo drinks in the market today is not the best. Making it yourself or getting it from trusted sources is the best way to assure the quality.
Pineapple peels are known to be rich in Vitamins particularly vitamin C. They also have antioxidant and anti-inflammatory properties just to name a few. It also gives a unique "natural pineapple" flavour to the Zobo. I encourage you to read more on this topic.
Please ensure to wash your pineapple properly before using the peels.
