If you watch the video carefully, the air is being pumped into the space between the skin and meat of the chicken to help loosen the skin and make it easier to remove at a later stage down the processing line.

Asides from the reason stated above, there's no economic benefit to air-pumping chickens or any other animal. Most meat types are measured by their weight and that renders it useless.
