There are monikers that have been promoting tribal bigotry as far back as 2010, and those were not Gen-Zs. You people should take it easy with the Gen-Zs blame. They met Nigeria the way it is. The goal is to take in more fiber from the sweet potato. The skin holds a big chunk of the potato's total fibre. An average sweet potato holds around 4g of fiber compared to 2g without the skin. The same reason It is healthier to eat fruits compared to drinking the same fruit juice. More fiber means better digestion, steadier blood sugar and longer feeling of fullness. The skin is also rich in minerals like Vitamins C, B and potassium.

More vitamins is preserved that way, especially water soluble vitamins like vitamin c. However, Potato is not a much healthy food, especially for someone on the diabetic spectrum. Plus tuber crops contain toxins.
