Although there was a time while growing up, one of my secondary school teacher who was a member of one of the pentecostal churches tried to make me leave the church. On the day I decided to quit was the day a non Catholic gave a testimony in church. It was a 6am weekday mass, I wasn't supposed to be in church that morning but I woke up very early that day. I had the urge to go to church since I was already awake with so much strength that I couldn't explain. I went to church and was the only alter server around, had to serve the mass. At the end of the mass during the time when we all rise for the final blessing, I saw an elderly woman and a Lady walk towards the alter. She came to share her testimony.


She said they were not catholics and have never been but that the lady(her daughter) had a very serious issue that was threatening her life and career. But she kept having a revelation to go and pray before a crucifix. She ignored it but the revelation kept coming. When she couldn't bear it anymore, she had to tell her mother. The mother said well Catholics are those who normally have crucifix and that was how they attended mass the previous day.


Since they were new, all they did was stand when we stand, sit when we sit, kneel when we kneel etc until the mass ended. Then they went to the alter and knelt before the crucifix and prayed. That very day after the prayer was when the truth was uncovered and her daughter was saved and exonerated of all charges. That was how she retained her job and didn't go to jail which was actually waiting for her.


This woman asked for a crucifix which the officiating priest blessed one, gave to her and prayed for them. That was the day I decided that come what may, am never leaving the Catholic church. God wanted me to know that He's there and i shouldn't be moved by the criticisms of the so called believers. So ever since, I just smile at those who call Catholics idol worshippers.

Hey guys! How do you enjoy your corn, boiled or grilled? I love mine boiled. Fresh corn on the cob can be a wonderful addition to any barbecue or special touch for a weeknight meal.

Boiled corn is simple to make, all you need is your fresh corn, salt and water. see the simple step below on how to properly boiled corn at home, this video above shows you the simple steps on how to boil corn on the cob.
What You Need

• 5 ears of fresh corn Red or white corn)
• ½ teaspoon of salt
• 3 cups of water

Steps on how to boil corn on the cob

1. Carefully remove all the peels and the silk from the corn into a bowl and rinse with water.
2. Place the corn in a large pot and add enough water to completely cover it. Add a little salt to taste if you love your corn with a taste of salt
3. Cook the corn for 10 minutes and lift the side facing up with a tong downward so that it get cooked evenly.
4. Cook the corn for 20 minutes on high heat until it becomes soft, you can pick one of the seeds with a fork to taste if it is soft.
5. Drain the corn from the liquid and serve with African bush pear (Ube)or fresh coconut.

Ofe Nsala Soup is a simple delicious white soup prepared with goat meat; it is one of the simplest soups made with a thickener. Yam is a very important ingredient in Ofe Nsala soup, as it is used to thicken the soup to give it a nice texture and look.

You can either boil raw yam and then mash into a smooth paste for Ofe Nsala recipe or dissolve yam flour (poundo flour) in water to thicken the soup.
However, ofe is traditionally garnished with Utazi leaves, but if you don’t have utazi, you can use Uziza leaves or spinach to add some greens to the soup; you just need a little of the leaves because it is not a vegetables soup. You can pair ofe Nsala with pounded yam, semolina or fufu,.

Ingredients For Nsala Soup

1. 1 kilo of goat meat
2. 8 pieces of tiny yam cubes
3. 1 cup of stockfish/dried fish
4. 3 seasoning cubes
5. 1 medium onion, chopped
6. 3 scotch bonnets or cayenne pepper
7. 2 tablespoons of ground crayfish
8. 1 teaspoon of ground uziza seed, optional
9. 3 medium size utazi leaves, shredded
10. Salt to tatse


Steps On How to Prepare Ofe Nsala

1. Peel yam nicely, dice into smaller sizes and rinse well, Rinse the goat meat and stockfish into a pot.
2. Add blended pepper, onions, 2 stock cubes, salt, goat meat spice to the meat and place on heat to cook.
3. Add enough water to the meat and also add the peeled yams to the meat and cook for 20 minutes.
4. Pierce the yam with a fork to check if it is soft, once it is soft, remove from the content.
5. Let the goat meat cook for a while until it turns out very soft. Place the yam in the mortar and mash gently or use a blender to blend it
and set aside,
6. Add some ground crayfish to the meat, more stock cube, and uziza seed and stir properly, you can add more water if the initial has drie
up.
7. Cut the mashed yam into bite sizes and drop into the pot containing the meat to dissolve.
8. After the yam has dissolved in the content, taste for seasoning and adjust if needed.
9. Add the shredded utazi leaves sparingly and stir well to combine, leave the soup to simmer for few minutes on medium heat. Take the
Nsala soup off heat and serve with soft-pounded yam.
