I grew up in a Christian household where morning devotion held everyday, including evening prayers on some days. For all the decades of my existence we've been praying for Nigeria and her leaders. That 🤬 don't work. I've wasted over twenty years of prayers on an impossible request, time that'd have been more useful strategizing japa.

I started like you, naïve and ignorantly, no offense, believing in this scam of a country, then I had the eye opening opportunity to experience Nigeria at a very deep level and I can assure you that the country is not going to change anytime soon. Lower your expectations for your own good.

Though the situation of this country weighs me down when I ponder on it, God can still remember us.
I don't know if you believe in God or not but I do.
There is nothing He cannot do, no situation He can not change.

Let me just give you a breakdown of how I make my beans.

* Pick and remove dirt and stones

* Add salt generously and pour boiling hot water over it. Stir for about 10 seconds and drain off. Follow with a cold water rinse once or twice. ( This step is to remove harmful preservatives. You can skip this if you cultivated it yourself or you are sure of the source)

* Put in a pan to parboil, adding about half teaspoon of baking soda ( not baking powder).

* Once it boils well, I do any of the 2 depending on how much time I have at hand:
(a) turn off the gas and leave the pot to stay for
about an hour. Thereafter, proceed to the next step.
(b) proceed to the next step immediately.

* Rinse out the water used for parboiling.

* Put in fresh water and continue cooking, adding baking soda again. Remember to stir occasionally so it cooks uniformly

* Once beans starts getting tender, you can now add salt.

* Adding your other ingredients depends on your style of finishing.

Note:
Baking soda is also called Bicarbonate of soda.
Alright but I have a little bit reservation for the baking soda.

Considering the fact that I cook beans often, wouldn't that be too much baking soda in my children's system?

Growing up, my mum used potash (akanwu) to achieve quick tenderness but when I became older, I discouraged that. We resorted to cooking partly at night, then finishing up in the morning.

Anyways I will make my findings on CONSTANT consumption of Bicarbonate of soda.

After the first wash with cold water, why parboil again? I thought the first wash has already washed the chemicals away!
No dearie, that first washing is not enough. Parboiling for few minutes is better

How is beans parboiled?
Wash in cold water, then put in a pot of boiling water. Allow to boil for like five minutes. Pour in a sieve to drain the water.

Then put back in your pot of boiling water and continue cooking.

Which is true, and let's be frank, we can't compete with thailand and brazil...who have the ability to grow far more rice than we ever can, and who can do it all year long (while in Nigeria, we would have to spend billions on a good enough irrigation system to beat them, and billions more to keep it running well enough self)..

But right now, we don't have enough forex to keep on importing. So, let's boost local production and improve transport systems.
Inasmuch as I'm rooting for local rice production, it's not working for now. Let's allow business men and women that want to import to do so.
The government should also remove any form of taxation/duties on imported food.

As the year comes to an end, most employers are trying to put a smile on their employees faces by giving out Christmas bonuses.

Yesterday we got rice, oil, seasoning and sachet tomatoes, not to say it’s small but at least it’s something to cover up for some Christmas expenses. Na to go buy chicken remain.
