The oil should cover it, you can use a small pot so you don't have to use much oil.
That's what I usually do when I have little oil. I use a small pot so I can achieve that deep frying.

Akposy, your puff puff batter should not be too watery so that you can form that O with your hand as it falls into the frying pan.
This is an old photo when I first learnt how to do the balls. I was even in Plateau at that time. Flour was cheap so it became an almost everyday thing for me.

Ingredients

Pastry/Dough
200 g flour
3 eggs
2 tea spoons baking powder
100 g butter
55-75 g sugar (depending on how sweet you like it)

Filling
300-500 g rhubarb (depending on how much filling you want to have)
1 package vanilla custard powder
300 ml milk
1-2 teaspoons sugar
½ - 1 tablespoons sugar

Topping
95 g icing sugar
1 tea spoon vanilla sugar (optional)

Pastry (dough)
1. Separate the egg white from the yolk. Keep the egg white for later use. Add flour, butter, sugar and baking powder to the yolk. Blend everything together for about 2-3 minutes with a kitchen machine/blender. Then blend it together with your hands until you have a homogenous mass.
2. Grease a round baking tin (26 cm) and sprinkle a little flour upon the butter.
3. Spread out the dough so that it extends 1-2 cm over the edges and put it in the fridge for about 30 min.

Filling
1. Wash, dry and peel the rhubarb. Cut it into small slices. Add 1-2 teaspoons of sugar and stir it.
2. Cook the vanilla custard with less milk (300 ml) and add ½ or 1 tablespoon sugar.
3. When cooked add the rhubarb to the custard and spread it on the pastry.
4. Bake in the preheated (180°C) oven for 20 minutes.

Topping
1. Add the icing sugar and the vanilla sugar to the egg white and mix it with a blender/kitchen machine until it becomes firm but not too firm. Take the cake out of the oven and spread the topping evenly on the cake. Bake for another 25 minutes at 160°C.
2. Take out the cake and let it cool down. Et vóila! Enjoy!


I prefer to use less sugar so that the cake is not too sweet but you may want to make it sweeter. That’s why I have given you two possible measurements of the sugar.

Thanks, it was baked. Can't be going through the stress of steaming in the little cups when it can be baked and kept in the fridge. Conserves energy as well.
