The issue of bricking rooted phones during OTA didn't start with Xiaomi anyway.

If I were u sha I would download the whole rom (not update dt pops on my phone) and flashed with Orange fox recovery. Finally reflash the magisk zip file to regain root access.

Sir you mean it is safe to unlock the bootloader and root, if there is an update; instead of updating via OTA, instead, I should download the whole rom that has the new update and flash via orange reocovery and flash magisk again to regain root?
I'd want to root because am an android enthusiast and so love playing with android phones and also extend the phones capabilities like using gcam and co.

I will since xiaomi.eu have continued development for Redmi 7 and released MIUI 11 ROM based on Android 10.
Check your updater app to see if Xiaomi.eu pushed the update via OTA

I am trying to move from Chinese rom to Global, and I have even downloaded the official lavender global rom of note 7.

But unlocking bootloader now is giving me issue

If your phone came with global rom, bootloader should be unlocked. Check it

Connect your phone in fastboot mode and click on settings on Mi flash stool. U should see there where to install your phone driver to your laptop. Had same driver issue with RN8
