Ingredients include: Coconuts(I used 6) Sugar (I used half of a bowl) Lime (just 1, natural preservative and for a little tangy taste) Considering that I used six coconuts, one who may only use a few coconuts can reduce the sugar to a 2 small cups of sugar. I heard that a healthier choice of sweetener can be sugar cane extract, but I haven’t tried that. THE PROCESS: Break the coconuts. I did that using my mortar and pestle. Break them a little as first so you can pour the coconut water into a bowl. Then break completely, to get the shell off properly. Once the coconuts are properly shelled, grate the flesh 🥥. Keep the shredded coconut aside. Use a small amount of water, (a 750ml bottle of water & a half of that will do), to boil the sugar. Squeeze half a slice of lime into it. Boil at low heat. Warning: Be careful, hot sugar syrup can give permanent scars if it spills on skin, hence the need for low heat and strict monitoring of others, especially children, if you have them around. Once the mixture starts to bubble and foam up, add the shredded coconut and stir slowly. This is the harder part. It will take a while for the sugar syrup to dry into the coconut. Once the sugar syrup dries into the coconut shreds, they will start to turn brown. You need to keep stirring so that everything can turn brown and dry evenly. All while the cooker is on at low heat. You can stop stirring when everything is a slightly golden brown color. There must not be any moisture, only a little oil, as coconuts do contain oil. Spread into a clean tray to cool off. Once it’s cool… Serve immediately or store in airtight packs if you wish (like me). |

So sorry about what you’ve had to go through. I just don’t understand some parents. They treat their children as if they hate them. How could a mother look at a child she gave birth to… a child that was vulnerable and totally dependent on her… cried for her and yearned for her approval… and just kill that child’s self esteem? It baffles me. I just can’t call it anything but cruelty. You have a right to feel hurt. But don’t hurt your mom. Instead, be a better person than her. Promise yourself that even towards death, you will never do what she did to you, to anyone else. At least you will have the assurance that you’ll always be better than her. |

A lot of abuse from men, thus creating a feeling of worthlessness, probably led to this. But, this isn’t the answer. It will never be. Ruining herself totally because of all she’s faced won’t make things right. I wish someone could convince her that there is an answer somewhere, even if she doesn’t think there is. Even if she feels she’s already ruined. |

Rice, chips, and pepper sauce Or Rice, potato chips, plantain, and some kind of scent leaf sauce ( I don’t know if anyone has tried that before, but i just made it like vegetable soup) .

pocohantas:Oh, you can simply make it like jollof rice or white rice, only that you’ll use little water. I just tried that method to make the couscous nice and everyone liked it. Whenever I make couscous I have to do it that way because they love it. You don’t need to do too much …. I totally expect you to be lazy at that point, the work is annoying 😅 |
Jollof rice, beans, spinach and fish. Nobody cooks bananas but they were a nice dessert, if you can call that dessert.

pocohantas:Please don’t let the food confuse you, abeg 😂 It’s not rice or garri, it’s rolled semolina. Tiny balls of rolled steamed semolina. I only buy the Golden Penny brand. Tastes like rice to me but … like rice made into very tiny balls. I boil water proportionate to the amount of couscous. Water that isn’t much more than the couscous. I add a little salt and oil. Then I add the couscous. Cook at very low heat. I make sure it doesn’t get too soft because the couscous gets soft very easily, without care, it will gel together and turn to semo. Next… I pour a small amount of oil into a pan. Fry plenty onions. Then add whatever I wish, which might be fresh or dry pepper, veggies, fish, any nice extras wey God don bless me with that day sha. Add seasoning too. Once the sauce is ready, I add the couscous. Fry it all together and let it steam for like ten minutes. That’s all. Then if you still want stew or vegetable soup or whatever soup you prefer, you can serve that on top of it or by the side. Like I stated earlier, it’s like rice to me. The better option to rice (since I don’t really like rice). |

Then the dad made a mistake by not insisting through any channel available, calling out and making noise, that she be present at least for the burial. He is to blame for some of the drama rising up. An investigation should be made. By the way, can you imagine a dad sitting down and relaxing that ‘the mother wasn’t available’ in a country like America? You know that he will suffer a lot for such a dubious situation, even if he is to be proven innocent at the end. We just try what we know we can get away with in this country. This isn’t about genders, it isn’t about a man’s innocence, it is about a child who every due wasn’t taken on when such a delicate matter surfaced. When it’s not a goat that died. She has every right to be suspicious. She did not even see the body. Doesn’t the mom have family members they can reach out to? Grandma, aunt, anybody close to her? For the dad to be able to take their child, he must know some people in her life. This is really not a good excuse. |
The right thing to do would have been to inform the mom the moment the girl got severely ill. That is a top priority, she is the mom, she is the most important person to contact first. How can anyone sideline a mother to the extent that she wasn’t even aware of her daughters burial as well? Is she a visitor or something in the girl’s life? It is right for her to be suspicious then. She did not even get to see the body. She needs to contact human rights services and police and whatever security agency can help her. R.I.P to the girl and I hope her mom gets justice. |
