How to make Butter Cake

When we talk about classic cakes, this is definitely in the lead. With its buttery rich taste, it will have you coming back for seconds. This is a popular cake for baking newbies, simple yet scrumptious. Also, goes great with a cup of tea or coffee.

Method

1. Preheat the oven to 350°F. Lightly grease an 8 inch (20 cm) square pan and line with parchment paper.
2. Mix plain flour and baking powder in a bowl and then sieve. Add in salt and mix. Set aside.
3. Mix butter (room temperature) and sugar on low speed using an electric mixer. Increase the speed and whisk until you get a pale yellow color.
4. Whisk in the eggs one at a time. Every time you add one in, mix well before adding another. Add in the vanilla essence and mix until creamy.
5. Add in the flour in 3 batches, making sure to mix well per batch. Pour in the milk one spoon at a time as you mix.
6. Pour the batter into the pan and make sure to level. Allow baking for about 50 minutes or until golden brown. To check if it is done, insert a toothpick and it should come out clean.
7. Remove from oven and allow to cool for about 10 minutes on a wire rack, then turn it out to continue cooling.
8. Best served warm.

While briefing the Senate Committee on Local and Foreign Debts in Abuja, the Minister of Transportation, Rotimi Chibuike Amaechi, has said his ministry is in talks with the government of China to establish a special university for Transportation.

According to Leadership, Amaechi clarified that the proposed university was not part of Nigeria’s agreement with China for the rail project loan. But that he had to request for a training university so that Nigerians can learn and manage the rail transport business on its own without calling for aids from Chinese engineers all the time.

The minister also explained that as part of plans, the federal government will be sending some students to China who will learn over there and come to lecture at the university when finally established, with all cost to be handled by the Chinese government.

On the inclusion of the Eastern Corridor Rail Line in the 2016-2018 External Borrowing (ROLLING) Plan of the federal government rail project, Amaechi noted that the present administration was only implementing contracts awarded by past presidents, including Chief Olusegun Obasanjo and the immediate past president, Dr. Goodluck Jonathan for railway modernisation in the country.

According to him, “prior to the resolution of the Senate, this administration had taken steps to incorporate the Eastern Corridor and indeed the North East Corridor that was not provided for all by the previous administration in 2006 and 2014 rail projects development”.

He explained that the situation necessitated the sourcing of financial option to which the federal ministry of finance has been directed by the President to take appropriate action.

Making Benni Seed (Sesame Seed) Soup

This is the perfect meal for a family reunion. A good substitute for melon (egusi) soup. Benni seeds are rich sources of stress-relieving minerals like calcium and magnesium. So thinking of thrilling your taste buds? Benniseed soup is best!

Method

1. Firstly boil the washed goat meat and ½ kilogram of beef in a pot over medium heat for about 30 minutes. Add the seasoning cubes and salt to taste.
2. While the meat is boiling, grind the benni seeds and set aside. Chop the ugwu and pepper and set aside.
3. Add pepper, washed smoked fish and dried fish and one cup of palm oil to the pot of meat. Allow cooking for about 20 minutes.
4. Add the ground benni seed, crayfish, ½ cup of locust beans and salt to taste if necessary to the pot. Stir and allow to cook for about 30 minutes.
5. Add the chopped ugwu and allow to simmer for few minutes.
6. Serve with any swallow of your choice.

The Federal Airports Authority of Nigeria (FAAN) has disclosed that checking of travelers’ luggage will no longer be done at the departure hall of the Murtala Muhammed International Airport, Lagos.

The Managing Director, FAAN, Mr. Saleh Dunoma, said this was part of the plan to ensure the implementation of the Executive Order recently issued by the Acting President Yemi Osinbajo.

“The Executive Order does not give room for pre-checks on luggage. All checks should be done in designated areas. Luggage should not be checked at the departure hall,” he said.

Dunoma added that there would be no compromise with the procedures and that whatever security procedure or security checks the agency would adopt would not be compromised.

He said, “We have to meet the deadline set by the Executive Order. There are strategies in line with the order, but the concerned agencies need to meet regularly to ensure that these strategies are adhered to and improved.

“Concentration is on the Lagos airport because it is the key airport due to its size, complexity and passenger traffic. If we get it right in Lagos, we will get it right in other airports. Once we do that, I believe all the other airports will be easy for us.”

Dunoma stated that the participating agencies, including the Nigeria Police, Department of State Security, Quarantine Services, National Drug Law Enforcement Agency, Nigeria Immigration Services, Nigeria Customs Services and FAAN Aviation Security, among others, would implement the directive successfully.

“All participating agencies are ready to key into this big committee set up for the implementation. Everybody is contributing positively. From all indications, all hands are on deck to make sure the Executive Order is implemented successfully. FAAN does not envisage any problem at all, and it is fully committed to give all participating agencies its full support to close any obstacle that may arise,” he said.

Meanwhile, the Nigerian Civil Aviation Authority has directed all aviation safety inspectors to monitor the level of compliance with the Executive Order at the airports, in addition to their statutory oversight responsibilities.

How to make Chicken-Fried Chicken With Cream Gravy

This is one chicken recipe that is worth the wait. The flour mixture coating gives it a very interesting texture. And you definitely can't go wrong with fried marinated chicken. This time, it's chicken-fried chicken with cream gravy, yum!

Methods

1. Firstly prepared the buttermilk, mix 1 cup of milk and 1 tablespoon vinegar and allow to stand until the milk and cream separates.
While the buttermilk is left to stand, chop the onions and mince the fresh garlic. Ensure the chicken are boneless and skinless and each weigh about 230 g.
2. In a large bowl, combine the garlic powder, 2 tablespoons of black pepper, ginger, paprika and ½ tablespoon of chili, mix then set aside. Sandwich each of the chicken between two plastic wraps and pound with a meat pounder.
3. In another large bowl, mix the egg, buttermilk ,1 tablespoon of the spice mixture together. Add the chicken and mix to coat.
4. Transfer the chicken mixture to a gallon-sized zipper-lock freezer bag and refrigerate for about 4 hours or overnight turning occasionally to ensure the content coats evenly.
5. To make the gravy, heat 2 tablespoons of butter in thick bottom non-stick frying pan over medium heat until foamy. Add the chopped onions and cook for about 4 minutes. Lower the heat and add the minced garlic and cook for about 30 seconds.
6. Add 2 tablespoons of flour and stir constantly for about a minute. Add 1 cup of milk and whisk constantly, add ¾ cup of whipping cream and continue to whisk for about 3 minutes until thickened. Season with salt and black pepper as desired. Keep warm.
7. Combine 2 cups of flour, baking powder, 2 tablespoons of salt and the remaining spice mixture in a large bowl. Add 3 tablespoons of the marinade in the zipper-lock bag and mix thoroughly with fingertips. Remove the entire chicken from the bag and toss in the flour mixture. Ensure it is well coated then place on a large plate.
8. Heat about 4 cups of butter over medium heat in a non-stick frying pan, add the chicken and fry, flipping it over continuously. continue this process until the chicken turns golden brown.
9. Transfer the chicken to towel-lined plate to drain for about 30 seconds.
10. Serve with the cream gravy. Yum!

How to Make Pasta Meatballs Under an Hour

Pasta is highly accepted especially among kids. Meatballs are a delight and this time we chose cream crackers over bread crumbs to give it a scrumptious taste. Thinking of a meal for the kids? Here you go! The taste of these meatballs are just heavenly.

Methods

1. Firstly chop the onions, garlic, chilli and basil and set aside.
2. Put the crackers in a towel and crush into fine powder. Put in a large bowl. Add the minced meat, mustard seed and rosemary to the bowl. Crack the egg into the bowl and add a pinch of salt and pepper.
3. Scrunch the mixture with clean hands until properly mixed. Roll into 24 meatballs and drizzle with little oil.. Put the meatballs in a tray and put in the fridge to firm up before frying. Alternatively fry immediately in 1 tablespoon of oil over medium heat for about 10 minutes and set aside. Ensure that the meatballs have no sign of pink when cut open.
4. In a sauce, heat 2 tablespoons of oil over medium heat. Add the chopped onions and allow to heat for about 7 minutes until tender. Add the garlic and as they start to get color, add the chopped basil leaves, chilli, plum tomatoes, vinegar and season to taste. Stir and allow to boil. Reduce the heat add the fried meatballs to the sauce and allow to simmer for about 5 minutes.
5. Cook the pasta in a lightly salted water for about 10 minutes or until soft. Allow to drain in a sieve.
6. Serve the cooked pasta with the meatball tomato sauce and sprinkle with finely grated cheese. Garnish with a piece of basil and enjoy.

Acting President Yemi Osinbajo has called for the prosecution of banks and their officials who aid corruption by hiding looted funds. He faulted those who accuse the Economic and Financial Crimes Commission (EFCC) of engaging in media trial, saying it was corruption fighting back.

The Acting President spoke in Abuja at the opening of a three-day conference on “Promoting International Cooperation in Combating Illicit Financial Flows and Enhancing Asset Recovery to Foster Sustainable Development”.

According to The Nation, Osinbajo said financial institutions that aid corruption should face the consequences.

He said: “There is no way the transfer of these assets can happen without a handshake between the countries that they are transferred from and the international banking institutions in the countries in which they are transferred. There is no way it will happen without some form of connivance.

“We have to look at somehow delegitimising those kinds of financial institutions and criminalising them.

“Banks and financial institutions that actually engage in this must be called out and made to face the consequences of engaging in criminal practices. If that is not done, we are not likely to go very far.

“In the agreement and conventions we will be signing, we must ensure that financial institutions are not given a free run and to hold them accountable., “

The Acting President said corruption fights back when stolen monies find safe havens and are accessed by the corrupt.

“In Nigeria, for instance, corruption fights back so eloquently that government itself, if not careful, can be overwhelmed,” he said. ,

Osinbajo said some of those guilty of corruption fight back through media attacks on government.

“If you look at the anticorruption fight in Nigeria, there is a major fight back in the media. There is a media war, between people fighting corruption and those behind the stolen funds. ,

“It is called ‘media trial’ – I don’t know what that means. If you discover, for instance, large sums of money in an air conditioned room, there is no where it will not make news in the world. ,

The Acting President said some development partners were reluctant to provide funding for Nigeria because they believed the country was not poor.

The Council after its monthly meeting at the State House agreed to bring together various teams to compete on developing a tool that will promote accountability, performance tracking and transparency among key Ministries, Departments and Agencies (MDAs) crucial to the success of Nigeria’s Ease of Doing Business, at the first #PEBECHack.

“The competing teams would develop a service management solution that will allow citizens monitor, provide feedback, report, make complaints, and ‘blow-a-whistle’ about the quality of service received from key Federal Government Doing Business MDAs or at strategic locations such as airports, seaports, and land borders,” said Dr Jumoke Oduwole, coordinator of the Enabling Business Environment.

Up to N1.5 million in cash prizes will be won, with several other in-kind prizes also up for grabs. Interested #PEBECHack participants can register as individuals or teams on www.ebes.gov.ng/pebec-hackathon between Tuesday, May 23 and Tuesday, June 6, 2017. The Hackathon itself will hold over two days on June 23 and 24, 2017 in Lagos.

#PEBECHack is held in partnership with L5 Lab, Venture Garden Group, Techplus, and Microsoft. Media partners are Pulse, Ynaija, and Starta.

Honey Ginger Glazed Chicken

Method
1. Remove the skin and bone from the chicken and set aside. Chop the onions and garlic then set aside.
2. Heat the oil in a large sauce pan over medium heat. Add the onions and fry until tender. Add the 450 gramms of the boneless and fry until it turns brown.
3. Add the ginger, chopped garlic, honey, soy sauce, fish sauce and ½ teaspoon five-spice powder.
4. Cook until the chicken is tender and nicely glazed.
5. Garnish with cilantro (optional) and serve with your favorite staple.

These cookies are easy to bake wonders. Crunchy and chocolaty! Suitable for breakfast and snacks. The chopped almonds give it a classy look. You should consider this for breakfast on your child's special day because chocolate is fun anytime.

Method

1. Sift the flour and baking powder into a mixing bowl. Add the butter and ½ cup chocolate powder to bowl and mix properly with fingertips.
2. Add ½ cup of chopped almond and ½ cup of sugar to the mixture. Pour ½ cup of condensed milk gently into the mixture and mix well.
3. Roll the mixture into balls and place on a greased baking tray.
4. Bake the ball at 190 degrees for about 30 minutes.
5. Serve with any food beverage of your choice.

Make Bailey's Puff Puff

Forget the normal look of this snack, this is the recipe of the month for us! There is something about using Irish cream to prepare certain meals. After we tried baileys pancake, we decided to try another recipe and this happened.

Method

1. In a bowl, mix all the dry ingredients together; flour, yeast, nutmeg & sugar.
2. In another bowl, mix 3 cups warm water and 2 tbsp baileys Irish cream. Set aside for about 2 minutes.
3. Mix both ingredients together and blend using your hands. Allow to rise for one hour or more. Once risen, add in some more Baileys (if you like alcohol).
4. Heat oil in a deep fryer or large frying pan until very hot, about 4-5 minutes.
5. Using your hands, scoop some of the mixture into the hot oil and allow to fry until golden brown.
6. Drain oil using a clean paper towel.
7. Serve hot.

How to Make Plantain Moi Moi Under 60 minutes

There are a thousand and one things to do with plantain and this is one of them. This recipe was born because someone somewhere didn't want to waste overripe plantain & today, we are thankful to that person. Lol. Kids & toddlers will love this meal.

Method

1. Mix the cornflour in warm water until it forms a smooth paste. Set aside. We are using cornflour to replace plantain flour. If you have plantain flour, feel free to use it.
2. Using overripe plantain, peel the back of the plantain, slice the plantain and place in a blender/food processor. Add in cray fish, pepper and 1 onion. Blend all together until smooth.
3. Wash, cut and clean the fish. Cook with one onion, salt and seasoning (if you desire). Cook for about 5 minutes. De-bone and shred with hands.
4. Mix the plantain and the cornflour paste together in a bowl, add in the fish, salt (if necessary), oil and stock cubes.
5. Scoop into moi moi leaves or bowl, wrap well and cook in a pot with water for about 45 minutes.
6. You may need to add water at intervals as moi moi tends to dry up quickly.
7. Serve with pap/ogi.

How to Make Watermelon Juice

This drink is surely a glow from within drink! It is a combination of vitamins and minerals. A good way to refresh yourself after a long sunny day. Garnish with a slice of cucumber and give yourself a perfect treat after a long stressful day at work.

Method

1. Firstly cut the watermelon. Remove the seeds and dice to fill one cup. Hull the strawberries and dice to fill ¾ cup. Dice the cucumber and apple to fill ½ and one cup respectively.
2. Cut the lime and squeeze out juice to fill one teaspoon. Set aside.
3. Put the diced watermelon, strawberry, apple and cucumber in a blender. Add one teaspoon of lime juice and blend until smooth.
4. Pour through a fine mesh into a bowl. Refrigerate the juice for about 30 minutes.
5. Serve cold.

Sausage Dirty Rice under 60 minutes

Do not underestimate this exciting meal. It looks dirty but not dirty! You sure want that experience where every scoop comes with sausage.Here it is right in your face. To get the best of experience, you can garnish it with scallions or spring onions.

Method

1. Cook the rice in a lightly salted water for about 20 minutes or until tender. Drain off the water and set aside. Dice the spring onions and set aside.
2. Begin by preparing the roux. Whisk 2 tablespoons of butter and the flour in a saucepan. Continue this process for about 5 minutes or until mixture turns dark brown. Set aside.
3. In another thick bottom sauce pan, add half the sausage, the paprika, cumin and black pepper. Mash the sausage and mix well to allow the spices set in.
4. Add ½ cup of the chicken stock to the mashed sausage as it begins to stick to the pan. Add in the garlic and roux. Reduce the heat and uncover for 10 minutes.
5. Add the remaining chicken stock as desired so that the mixture does not dry out. Continue to check and stir occasionally.
6. Add in the cooked rice and remaining 2 tablespoons of butter. Stir properly. Garnish with diced spring onions and serve.
