If i can i would help you send some eru that's if u have someone who is travelling to cameroon and back to the U.S. and is reliable and willing to take your parcel. @malia where are you based? you could ask the person selling the eru to slice your finely (small slices) soaking in water does not make eru soft the only secret is using enough waterleaf (spinach) and palm oil. |

@ Sasi_malia sorry am just seeing ur post now I think you should boil the oxtail and snails seperately then u can put together later and add ur spinach. I u are using fresh snail be careful coz it won't stop getting slimmy at times i use limes or what we call alum to stop the slimmy liquid from the snail hope this helps |

wash and peel about 2 sweet potatoes slice them together with tomatoes, carrotes you can add meat or fish boil for 45 minutes leave to cool and later grind the mixture in a food processor or blender. and a cube pf maggi and Cook the mixture again for about 20 minutes Nb: You can substitute sweet potatoes with white potatoes |

@ jovi Njansang always comes dry so u don't need to dry it before grinding yes it is used to make peppersoup grind ur njansang and tomato together(about 2 or 3 tomatoes) some people add green spices boil meat and when ready add blended njansang and tomatoes and leave to cook for about 10 minutes, then add ground ginger, garlic, pepper, white pepper and leave to simmer; add maggi to taste. u can put a bit of groundnut oil at the end. if u are using fish start by coking the blended njansang and tomatoes, then add the spices, maggi and then put ur fish or u can mix the blended njansang and tomatoes with fish, add the spices, maggi and salt. then leave for a while. u can then put in a pot an dcook for about 20 minutes |

Poulet DG (Poulet Directeur Général) What you need One chicken, cut into serving-sized One-quarter cup oil Salt and black pepper to taste One Maggi® cube and/or a one-inch piece of fresh ginger root (peeled and minced) or a teaspoon of powdered ginger and/or fresh herbs of your choice (parsley, celery leaf, etc.) One garlic clove, minced Two carrots, chopped Haricots verts or thin French green beans, ends trimmed (optional) Two or three sweet peppers (bell peppers): green, yellow, orange, or red, cleaned and chopped (optional) Two tomatoes, chopped or canned tomatoes (optional) one onion, chopped What you do If desired: Combine chicken, a tablespoon of oil, spices, carrots, green beans, and peppers in a bowl. (It's better to have most of the "optional" ingredients; carrots and bell peppers are the most common, tomatoes the least common.) Stir well. Let marinate for one to three hours. Heat remaining oil in a very large skillet or dutch oven. Add onions and fry briefly, until they begin to become translucent. Add chicken and fry over high heat until lightly browned. Add remaining ingredients, except tomatoes which should be saved for last. Reduce heat. Do not cover. Simmer, stirring regularly, until chicken is done and liquid partly evaporated, leaving some sauce. (Add warm water by the tablespoon if the pot becomes dry before the chicken is done.) Add tomatoes (if desired), and simmer for a few minutes more. Serve with Rice, Miondo (Cameroon's version of Baton de Manioc & Chikwangue), and Fried Plantains. The Poulet DG can be mixed with the fried plantains immediately before serving |

yeah i know but i think some people would prefere using cameroonian ingredients to cook cameroonian meals dats why they still take along these ingredients to naija the same way some nigerians in cameroon bring along naija ingredients when they travel from nigeria |
