not sure- there's the risk of spoiling, unless it was refrigerated. from personal experience, after two or three days (at most four), it starts going bad. the taste wouldnt be as fresh. however, other cakes like fruitcakes, are specifically aged with the intention of altering the taste. so, i guess it depends on the type of cake. |

monalicious: nice thread.it is going to be very helpful, to me atleast.I found out that my cake usually doesn't stick together.it usually has crumbs, like bread when I slice. do yiu know why this is? the 2 secrets of cakes are 1. ur eggs, flour and butter must be the same measurement. (measure ur eggs on a scale with the shell I.e 1kg flour, 1kg butter and 1kg eggs with the shell. As for the sugar, as u desire.) 2. make sure u cream ur butter and sugar until very fluffy. (I.e until it pours life made custard that is mixed with milk. it should be watery). let me add that ur baking powder also matters. use 15ml level (the 15ml is in the measurement pack sold in any baking shop)for 500g of flour. don't use carton butter it can never give u good taste as buckets. tpia1: not sure- there's the risk of spoiling, unless it was refrigerated. it depends on the preparation and preservative. my cakes stay up to 2 weeks without been refrigerated and I don't use alcohol. the funniest thing is that alcohol doesn't preserve it only changes the taste after a few days. |

Prevent water from getting into ur cake when you're mixing it, for coconut cake make sure d coconut lost its moisture content by drying it with dryer or sun after grating it before adding it to your mixture. I bet you ur cake will last for more than two weeks. |

for those interested in fundant mix, u can try out this recipe: 1kg confectioners sugar(icing sugar) 1.5tsp gelatin half cup glucose 1 teaspoon CMC 1/8 cup water method: I prefer the double boiler method to microwave. Dissolve the gelatin in water using an enamel bowl. leave to stand for a couple of minutes say 3mins. place a saucepan on fire with water. put the bowl of gelatin mix in the saucepan then add the glucose. if u r using glycerine you can add it now. Bring the water in the saucepan to boil while stiring the mixture....till its well combined and slightly colorless. Don't allow the mixture to boil. Remove from the heat and allow to cool. Meanwhile, in a big bowl, seive the sugar and CMC. if you are making gum paste, add 1teaspoon gum tragacanth and seive together. Pour the warm mixture and mix very well. place on a surface and knead till smooth, and pliable. You have your sparkling white fundant. You can add 1/2teaspoon of shortening (crisco) for a softer, glossy feel. Split the fundant accordingly and add your desired color. Use paste please, its better. timok4chri: pls what i put in cake to make it fluffy chocolate cake apart from brown power that makes it bitter. thanks I don't know what you mean by brown powder, but if its the coco powder, then its essential...except you can access sweetened chocolates. I think you should post your recipe here to get better help...because that powder has nothing to do with the fluffy nature of your cake. if your are using butter, ensure to cream well...if you are usimg vegetable oil, then make your you hav enough eggwhite...whisked till doubled and frotty... hope this helps u |

Please i need one of you to give me a cake recipe using measuring cups. The scale part is confusing me. Please!!! Try n make it this way, 'a satchet of baking butter is to be used with so so cup of flour n so so numba of eggs'. Tnx For accuracy is best to use scale cos the content of the satchet may be more than or less than the measurement u need. Number of eggs too may vary in content so it is better to measure with scale. If u want ur cake to be very nice, accurate measurement is important. |
