First, I marinated the flat meats in the suya spice that I made, courtesy of my learning from the best mai suyas in Adamawa during NYSC.

Below is the marinated meat.

Here is the suya spice I made. I have all the separate ingredients for making it, hence I always mix them proportionately whenever I plan for the preparation.

Then here is the marinated meat going into the oven.

I prefer using the oven instead of a charcoal grill because of the carcinogenic effect of roasting meat over an open flame. It is more healthy this way.

I mix some of the suya spice with some vegetable oil to form a paste that I will rub on the meat while it roasts grin

Note that this suya is being prepared LIVE. As in right now. I am making it and showung you the various steps as I go along.

After roasting for about 10mins, the upper side is half done. So I rub some of the spice+oil mixture. This mixture helps to fry the inner part of the meat and also keep the meat moist.

Note that I didn't have a rubbing brush so I used a new scrubbing sponge grin

You must improvise o grin

Checking the progress so far. It is almost done wink

That liquid on the top is the oil. You can just drain it off if you don't like too much oil by flipping the meat over and allowing it to drip into the pan below.

You actually did. It is a mind thing. It happens sometimes when we see a visual image and desire it so bad. The mind compensates by bringing up past smells of that thing. I have forgotten the name of this phenomenon.

Batch 2 goes in and roasts halfway. Then I add the oily spice.

Sompeople like me like their suya very dry so I don't add too much spicy oil to it. I compensate for this by allowing the meat stay longer in the oven. It dries and fries longer.

Others like theirs moist, hence the moist batch 1.
