Lol...although I didn't read the post, I will like to share my experience frying an over ripped plantain due to hunger cum recession. .. I had this 5 fingers of plantain my bae left in my fridge after the usual Saturday visit. So within the the soup she made and the stew was feasted upon by my hungry men I call my friends.. By next Saturday it was me, myself and hunger..no bae ..no friend ..no money...I went to the fridge. .Alas !! 5 fingers of overtly ripped plantain. ..I said "ah Egede na plantain ...and plantain na for chop.." I hurriedly ran to the mallam's shop.. took two fresh eggs and went back to the house. I peeled the plantain..it was way too soft...I sha managed and to peel it, sliced it and began to fry them. The plantain wasn't frying the usual way and I was hungry. ..I fried it that way, fried my eggs made my oat. The plantain tasted like plantain chips ...that very type the sell as if u are diverting to VI from CMS After eating it. ..I shouted oh ooo! So they make those plantain chips from over riped plantain. ...it was a learning point for me... 2 Likes |

Today I will tell you one "secret" about plantain: plantain can still be fried perfectly well even if it is over-riped. All you need to do when plantain is over-riped is cut it into the shape you desire , sprinkle salt on it and fry. The plantain will fry well. Without a sprinkle of salt the over-ripe plantain will be too soft and will just soak oil if you try to fry it. 1 Like |

Phi001:You don't have to, especially if you don't like it to taste salty. On the other hand, the reason for sprinkling salt when it is over- riped is that the salt hardens the soft plantain while frying and it won't taste too salty. |

100 grams of plantain flour Pepper to taste Salt to taste 2 cubes of seasoning 1 onion Some crayfish 2 cooking spoons of palm oil A pinch of ground ginger for flavour Cool water Uma leaves (the traditional wide leaves used for Moi Moi which give it a nice flavor) or small bowls The steps for preparation are: 1. Cut your onions and pepper, likewise the washed plantain. 2. If you are going for the leaves ensure that you wash it thoroughly before using 3. Mix the plantain flour in a bowl with just enough water to make it a bit thick 4. Blend the overripe plantain with the pepper, onion, and plantain flour batter, adding just enough water to grind the mixture 5. Pour the mixture into a bowl and add your seasoning, ginger salt and palm oil 6. Put a small quantity of water on the fire to boil. Ideally, you should place a steamer in it but if you don’t have that, you can use the cover of a smaller pot as the base. 7. Using a ladle, pour some into the leaves or bowl and wrap carefully 8. Place the wraps on top of the base 9. Leave for about 30 minutes and add water if necessary 10. Let it cool then serve with pap or custard. All these lists and procedures just for a few pieces of overriped plantain dat I can just slice it up and give to my goat to eat. Mtcheeeeeewww!!
