try this recipe
Flour 500g
sugar 100g
marg 50g
nutmeg 1tspoon
egg. 1
pinch of salt
water 1/4 cup
milk 2tspoon ( optional)
baking powder 2teaspoon

Method
mix all dry ingredients den rub in the margarine.
add the egg and mix well.
add water gradually till you get a stiff dough.
turn unto a lightly floured board and knead till soft and stretchy.....but not sticky ooo.
cut into desired shapes and sizes and fry in deep oil.

NB: I use 250g margarine for 2kg of flour.
Though marg helps to soften the chinchin, you don't hav t put it in excess

Ok. Thanks zionjewel but really, this doesn't help me much. I use all those ingredients but my problem is the measurement/proportion. Like seriously, I'm I supposed to buy a weighing scale for chinchin? I'm in nigeria pls I need naija standard quantification.

Remember, flour here doesn't come prepackaged and measured, unlike fat(when u buy 1satchet that 150g, u'll know that 1/3 of it is 50g). The baking powder and other things I can measure with a teaspoon, that's cool!

And I think that's the problem most people have with baking most times.

I'm in Nigeria too. just get a small kitchen scale....abt 1k..
Without good measurement, you can hardly get favorable result in ur baking and most flour-based snacks....

Surely, ur problem is your flour: margarine ratio....

Take the leap dear and get a scale and measuring spoons & cups....

Huh? Seriously? 1k? And here I was thinking its like 15-20k. Thus, I shouldn't have need for it as I'm not frying for commercial purposes. Ok! Thanks zionjewel! Mmmmuuuuaaaaahhhhh!!!!!!!!!!

Zionjewel is right, and I'll advise you get the digital kitchen scale as it gives u d chance to change ur measurement to whatever unit you want. Some even have liquid units. If you do try a lot of different recipes, then this is best for you. Got one of this for 6k in Ibadan (home's plus).

The key to a fluffy cake is creaming butter and sugar properly(until its almost white) and whiping as much air as u can into ur eggs b4 adding them to the butter and sugar - @least that's what works for me...

You'll get s fluffy cake once you cream the butter well
You can also incorporate cake softener.....it also helps especially for large quantity of cake batter
