Forgive the fact that i dont know the english name for ewa agoyin but it is a style of cooking beans which is eaten mostly in the western part of nigeria. I always enjoyed it while in lagos, especially with bread but i cant enjoy it anymore due to my current location. I would like anyone who has the recipe to ewa agoyin to kindly share it with me.

The best method :

To avoid purging from eating beans, what you do after picking your beans is to wash it about 2times, then you pour boiling water over your beans in a bowl, stir it with a cooking spoon and let it sit for like 20-25 mins, sieve out the dirty water, wash one last time, then cook .

after going through your recipe, i think the reason i was purged is because i used white beans (patasco) instead of the honey beans and i cooked it till it was overdone.

In cooking ewa agoyin, there's no such thing as "overdone"
The softer it is, the better...
Just follow my method of washing your beans before cooking...let's see how it goes

Maybe the beans or 1 of the ingredients used was preserved with some kind of chemical which did not sit well with your system. Try presoaking the beans. I always soak my beans overnight before cooking.

Soaking beans overnight takes the sweetness out of the beans .
The beans becomes over soaked with water and does not soften .

30mins max is enough.
Plus, your beans cooks faster without the need to add potash and you save gas .

Thank you. Omo that beans ehn, I cooked it for 2 days. The more I cook the harder it became it was a one off thing so I thought it must be the beans cos all along I never experienced such.
